Roasted hazelnuts are the dependable.
And I simply know you have lain awake at night wondering how you can roast them, skin them and fold them into cookies, granola or biscotti?! I know I have.
This here is the post where the mystery of how to skin those little nuts unfolds, step-by-step… right before your particularly eyes!!! Okay, so you guys, it’s truly ridiculously unfussy. Roast, toss, roast some more and then shake in a clean kitchen towel. But in the past I might have shied away from a recipe that requires roasting and skinning nuts unless I could see simply how it was suppose to look like.
Like most recipes, it helps to see it unfold before my eyes to feel confident in attempting it myself. It’s also cheaper than buying them already roasted.
Roasting hazelnuts are 100 times better than regular un-roasted hazelnuts. Something about toasting them brings out their inner-nuttiness and turns them into something special. BTW I can so pop these suckers like candy.
Roasted hazelnuts will change your life. forever.
To start you’ll need hazelnuts, a sheet pan, a clean kitchen towel and an oven.
Pour the nuts out onto the rimmed sheet pan.
Spread them out evenly and pop the pan into your preheated oven and roast for 4 minutes.
After the first 4 minutes, you can see the skin starting to crackle and peel. It’s something to do with water evaporation and the hazelnut shrinking within the skin.
Toss them around and pop them back into the oven for 4 more minutes. Of course you could only shake the pan and not dirty a spatula.
Repeat this stem 2 to 3 more times until the nuts are toasty and fragrant.
Carefully, using oven mitts, pour the hot roasted nuts in the center of your clean kitchen towel.
Twist them up and shake them with some good effort (truly wish I had a video of me doing this, not) so the hazelnuts rub against each other and the towel, removing their skin.
It’s truly that straightforward.
Handpick the nuts out of the towel, don’t worry about the little skin-dust and simply leave the flaky skin behind.
Store shelled hazelnuts in an airtight container if storing in the pantry or fridge. If freezing, I recommend using a freezer-safe re-sealable bag.
If stored properly, these will keep in the pantry for up to 6 months. If stored properly in the refrigerator (1 year) or freezer (up to 2 years).
