Pistachio Salad, Raspberry Style

This Raspberry Pistachio Salad is simple yet so savory. In it, juicy fresh raspberries, chopped pistachios and crumbled salty feta sits atop of your regular leafy salad blend and is drizzled with a kitchen-made fresh raspberry walnut vinaigrette. Yields 1 serving but can easily be doubled or quadrupled to serve more.

This raspberry pistachio salad is my latest obsession.

I’ve made it simply about every day for the past few weeks. I do add grilled chicken (yes, I’m still grilling in these freezing Michigan temperatures) to get some protein so I stay fuller for longer. Not only is this salad flavor-packed but it’s also so straightforward to pull together. I’m not the biggest fan of making lunch so if it’s unfussy, I’m more likely to make it. And this salad is speedy and unfussy and so worth the pot!

I particularly love the crunchy pistachios and feta cheese😍

To cook this Raspberry Pistachio Salad Gather:

  • leafy salad greens
  • raspberries
  • pistachios
  • feta cheese
  • raspberry walnut vinaigrette

Make The Raspberry Walnut Vinaigrette:

I shared the recipe for my creamy raspberry walnut vinaigrette on Monday. This dish is so unfussy and takes only minutes to make.

Note: If you don’t want to make the dressing. Ken’s makes a light raspberry walnut vinaigrette that’s pretty memorable.

Build The Salad:

In a shallow bowl or plate, add 2 to 2-1/2 ounces leafy salad greens – genuinely however much you like! Top with 1/2 cup fresh raspberries, about 1 tablespoon chopped pistachios and 1/2 ounce crumbed feta cheese.

Drizzle with 2 tablespoons of the raspberry walnut vinaigrette.

Season with some freshly ground black pepper.

That’s it! Feel free to add any protein you prefer for this a more satiating salad!
