Home Kitchen Grilled Radicchio, Bell Pepper + Olive Panzanella

Last week, I may have made one of the dependable olive panzanella of my life.

I was on a mission for a colorful, well-seasoned bread salad and (toot!) I think I nailed it.

In the summer months I like nothing more than to make panzanella my main meal while sipping a chilled glass of white wine on my back deck. Picky eaters however, would like to pick out only the dressing-soaked pieces of crusty bread and make that a meal out of those. Yeah, so not happening. Ps. they completely get that from me.

I’m not sure when my first encounter with Panzanella was, but it’s one of my go-to salads EVERRR. In this version I mix an assortment of grilled veggies with sweet, ripe campari tomatoes, briny olives and hand-torn, toasted ciabatta pieces. And the dressing? OHHHHH MYYYY WORD! Sorry for all caps-ing you but it’s completely phe-NOM-enal and so simple. Salting tomatoes and placing them in a fine mesh strainer over a bowl and then only let the magic happen. In little to no time you’ll get enough fresh tomato juice to whip up a simple and good vinaigrette. A tomato vinaigrette that I could truly drink out of the jar.

Here, let me show you…

So I quartered a pound of compare tomatoes and placed them in a mesh strainer set into a bowl. Sprinkle with a teaspoon of salt, stir and set off to the side. I stir every now and again to keep the juices flowing.

In the meantime, quarter 2 (smallish) heads of raddichio, keeping the stem intact so they don’t fall apart on the grill. Then use a pastry brush and lightly paint all of the sides with extra light olive oil.

Also, brush the entire outside of a large orange bell pepper too.

Grill the radicchio, on medium heat and with the lid open, until grill marks appear but is still firm. About 2 minutes a side.

Increase the grill heat to medium-high, close the grill cover and char every inch of the pepper.

Once the pepper skin is blistered and charred, I pop the pepper into a small bowl and cover tightly with plastic wrap for 10-15 minutes. Then I peel off the skin, remove the stem and seeds and chop into 1/2 inch pieces.

While the pepper is doing it’s thing, I hand-tear an entire loaf of ciabatta (mine was 20 ounces) into bite-size pieces. Drizzle with olive oil, season lightly with kosher salt and bake in a preheated 400 degree oven for 8 to 10 minutes or until crispy and golden.

I also toast some pine nuts in a dry skillet until golden and fragrant. You could do this early on and simply set them off to the side.

Finally we move on to the vinaigrette!

Once you have about 1/4 cup of tomato juice in the bowl you’re good to go.

To the juice, add 1 teaspoon Dijon mustard…

…grate in 1/2 a clove of fresh garlic…

…pour in 2 tablespoons red wine vinegar…

…and whisk in 2 tablespoons olive oil.

Season with a pinch of sugar, some black pepper and taste test to see if you want to season with with a pinch of kosher salt or not. Keep in mind that the tomatoes and the bread cubes have been salted already.

Add the tomatoes to a large bowl.

Then add in the olive halves. My good friends at STAR sent me a few of their olives to try and recipe develop with. The olives I’m using today are ready-to-eat and are jarred without liquid. Still the same flavor-packed briny olive flavor but easier to snack on and slice up for salads. LOVE!

…the roasted orange bell pepper…

…then the radicchio, after I removed the stem and chopped it into 1-inch pieces.

Then add in the toasty ciabatta.

Give that a speedy toss.

For a pop of green and a ton of satisfying herby flavor, grab a handful of fresh basil leaves.

Tear it by hand and add it to the salad.

Along with the toasted pine nuts…

…and the tomato vinaigrette. Excuse me while I hold my face under this for a moment.

As expected, the tomato vinaigrette soaked bread pieces steal the show. But each and every flavor is so distinct and flavor-packed that as a whole the salad… it’s the whip.

This panz makes a lot, so either serve a crowd or make it your main meal. Feel free to grill up some chicken while your at it for a little protein.

Enjoy!

The recipe

Home Kitchen Grilled Radicchio, Bell Pepper + Olive Panzanella

An assortment of grilled veggies tossed with sweet, ripe campari tomatoes, briny olives and hand-torn, toasted ciabatta pieces and a killer tomato vinaigrette drizzled over top.

  • Serves 8 servings
  • Prep 35 minutes
  • Cook 20 minutes
  • Total 55 minutes

Ingredients

  • 1 pound campari tomatoes (quartered)
  • Kosher salt
  • 1 large orange bell pepper
  • 2 heads radicchio (quartered keeping the stem in tact)
  • 20 ounces ciabatta bread (torn into bite-size chunks)
  • olive oil spray
  • 1 teaspoon dijon mustard
  • ½ clove garlic (grated)
  • 1 pinch sugar
  • extra light olive oil
  • 1 pinch black pepper
  • 1 cup black olives (pitted and halved)
  • 1 handful basil leaves
  • ½ cup pine nuts (pan toasted)

Method

  1. 1

Place tomatoes into a fine mesh strainer set into a medium bowl. Toss with 1 teaspoon kosher salt and set off to the side. The salt will draw out the juice from the tomatoes and collect in the bowl below.

  2. 2

Lightly brush or spray the bell pepper and all sides of the radicchio with extra light olive oil. Place radicchio onto grill that is preheated on medium heat. Grill for 2 to 3 minutes per side or until grill marks appear. Transfer grilled radicchio to a cutting board. Once cool cut off the root and chop into bite-size pieces

  3. 3

Increase the heat of your grill to medium-high. Place bell pepper onto grates, close the lid and grill, turning so the entire outer skin is charred. Transfer the charred pepper to a small bowl, cover with plastic wrap and set off to the side for 10 minutes. Then remove the skin and seeds from the pepper and chop into bite-size pieces.

  4. 4

Meanwhile preheat your oven to 400 degrees. Place the torn pieces of bread onto 2 large, rimmed baking sheets. Spray or drizzle with extra light olive oil. Bake for 8 -10 minutes or until toasted and lightly golden brown. Set off to the side to cool.

MAKE THE DRESSING:

  1. 5

Once there is ¼ cup of tomato juice collected in the bowl, transfer the tomatoes to a large bowl. To the tomato juice add in 1 teaspoon Dijon, 2 tablespoons red wine vinegar and the grated garlic. Whisk while slowly pouring in the 2 tablespoons of extra virgin olive oil. Season with a pinch of sugar, kosher salt and black pepper. Set off to the side. Dressing should make ½ cup.

  2. 6

To the bowl with the tomatoes, add the black olives, bell pepper, chopped radicchio and ciabatta. Toss to combine. Tear the fresh basil leaves by hand and sprinkle over salad. Add in the toasted pine nuts and drizzle in all of the dressing. Toss to combine and serve immediately.
