What Exactly is a Buddha Bowl?
The term “Buddha Bowl” has surged in popularity, becoming synonymous with healthy, balanced, and visually appealing meals served in a single bowl. At its core, a Buddha Bowl is a beautifully arranged, nourishing dish typically comprising a cooked grain (like quinoa, rice, or couscous), a generous portion of leafy greens, an assortment of fresh or roasted vegetables (and sometimes fruits), a source of protein (often plant-based), healthy fats (nuts, seeds, avocado), and a flavorful dressing that ties everything together. The name is said to derive from its heaped-up, rounded appearance, resembling a Buddha’s belly, or perhaps the sense of peace and mindfulness it encourages during meal preparation and consumption.
Beyond being aesthetically pleasing, Buddha Bowls are celebrated for their incredible versatility and nutritional value. They offer a perfect template for mindful eating, ensuring you get a balanced intake of carbohydrates, proteins, fats, and essential vitamins and minerals in one convenient serving. They are inherently customizable, making them ideal for accommodating various dietary preferences, from vegan and vegetarian to gluten-free, and are fantastic for meal prepping throughout the week. Once you start exploring the world of Buddha Bowls, you’ll find an endless array of combinations to keep your meals exciting and delicious.

Crafting This Extraordinary Tandoori Chickpea & Squash Buddha Bowl
This particular Buddha Bowl is a testament to how simple, wholesome ingredients can come together to create something truly exceptional. I wanted to combine some of my absolute favorite elements, focusing on a harmonious blend of flavors and textures, while maintaining a captivating palette of green and golden hues that naturally emerged from my ingredient choices. It wasn’t planned, but it certainly adds to the bowl’s inviting charm!
A Symphony of Flavors and Textures
What truly sets this bowl apart is its dynamic interplay of flavors and textures. Every bite offers a new discovery, making it incredibly gratifying. You’ll experience the satisfying **crispness** of perfectly roasted chickpeas, the **creamy** richness of fresh avocado, the delightful **crunch** of chopped pistachios, and the tender, slightly **chewy** consistency of roasted delicata squash and plump raisins. This isn’t just a meal; it’s a party in your mouth – a truly delicious and healthful celebration of diverse ingredients working together.

The Stars of the Bowl: Tandoori Chickpeas and Delicata Squash
We begin our culinary adventure by preparing the foundation of this bowl: the incredibly flavorful roasted chickpeas. Roasted chickpeas are a personal favorite of mine; it’s astonishing how these humble legumes transform into such delightfully crispy morsels in the oven. Once roasted to golden perfection, they are generously tossed in a fragrant homemade tandoori seasoning. This spice blend is a powerhouse of flavor, infusing the chickpeas with warm, earthy, and slightly smoky notes that are utterly addictive. While they are a crucial component of this Buddha Bowl, these tandoori-spiced chickpeas are so delicious, they can easily be enjoyed on their own as a healthy, crunchy snack.
Next up is the star squash: delicata. This seasonal gem is fantastic because it requires minimal prep. Unlike many other squashes, delicata has a thin, edible skin, meaning there’s no need for arduous peeling. Simply slice it into elegant rings, toss with a touch of olive oil and a sprinkle of salt, and it’s ready for its quick trip to the oven. We time its roasting perfectly, sliding it into the oven when the chickpeas are halfway through, ensuring both components are ready around the same time. While these two key ingredients roast to perfection, I quickly prepare the fluffy couscous and whisk together the rich, zesty tahini dressing. Then, it’s time for the truly fun part: building these magnificent bowls.

The Art of Assembly: Building Your Buddha Bowl
Assembling a Buddha Bowl is an art form in itself, transforming simple ingredients into a visually stunning meal. While I admit to having a soft spot for meticulous food arrangement, especially when it comes to bowls of vibrant ingredients, the beauty of a Buddha Bowl lies in its natural, bountiful appeal. There’s no need for absolute perfection; just arrange the components thoughtfully to create an inviting and appetizing presentation.

To construct your bowl, start with a base of about 1/4 to 1/2 cup of fluffy, prepared couscous. Next, artfully divide the roasted delicata squash rings, a generous bed of fresh leafy greens (I love using an organic baby kale blend for its delicate texture and nutritional punch), creamy slices of avocado, a scattering of sweet raisins, and a sprinkle of crunchy chopped pistachios around the couscous. Finally, add the star of the show – your warm, aromatic tandoori roasted chickpeas. The beauty is in the abundance and the natural arrangement, allowing each ingredient to shine.

The Finishing Touches and Flavor Explosion
Before diving in, I like to add a delicate sprinkle of smoked sea salt over my bowl. This tiny addition enhances all the existing flavors, adding a subtle depth. The final, essential step is drizzling the creamy, tangy tahini dressing generously over all the ingredients. Then, with my fork ready, I usually give it all a good mix and mash before taking that first blissful bite. The dressing beautifully coats every component, mingling with the aromatic tandoori spices from the crunchy chickpeas to create an explosion of flavor that is truly amazing. The avocado contributes a rich creaminess, the raisins offer a subtle burst of natural sweetness, and the roasted squash provides a hearty, sweet butternut squash-esque flavor without all the fuss of peeling. (A quick note on the squash skin: it’s completely edible, though a bit tough. For aesthetics in photos, I sometimes leave it on, but in my day-to-day eating, I usually remove it for a smoother texture.)

This Tandoori Roasted Chickpea & Squash Buddha Bowl quickly became my go-to lunch for several days, and remarkably, I never grew tired of it. In fact, I found myself eagerly anticipating this glorious bowl each day, and I genuinely felt a touch of sadness when the last serving was gone. It truly was *that* good – a perfect blend of nourishing ingredients, irresistible flavors, and satisfying textures that kept me coming back for more.

- 1 tablespoon olive oil
- kosher salt
- 2 teaspoons homemade tandoori spice blend
FOR THE BUDDHA BOWL:
- 2 delicata squash, seeded and sliced into 1/4 to 1/2-inch rings
- 2½ cups prepared couscous, about 1 cup dry- follow package directions to prepare
- 5 ounces baby kale blend
- 1 avocado, halved, pitted, sliced and removed from skin
- 1/2 cup raisins
- 1/4 cup chopped pistachios
- 4 teaspoons chia seeds
FOR THE TAHINI DRESSING:
- 1 clove garlic, grated (about 1 teaspoon)
- 5 tablespoons tahini
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 to 4 tablespoons warm water, to thin out the dressing
- 1/2 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
Instructions
FOR THE TANDOORI ROASTED CHICKPEAS:
-
Preheat your oven to 400℉ (or 200℃) and line a rimmed sheet pan with either parchment paper or a silicone baking mat.
-
Drain, rinse thoroughly, and pat the chickpeas completely dry with a kitchen towel. This step is crucial for achieving maximum crispiness.
-
Transfer the dried chickpeas to the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and toss them gently to ensure an even coating. Sprinkle with 1/2 teaspoon of kosher salt.
-
Bake in the preheated oven for 30-40 minutes, or until the chickpeas are golden brown and wonderfully crispy. Keep an eye on them towards the end to prevent burning. Remove them from the oven and immediately transfer the hot roasted chickpeas into a bowl. Add 1 to 2 teaspoons of the tandoori spice blend, tossing well to coat every chickpea while they are still warm.
FOR THE BUDDHA BOWL:
-
While the chickpeas are roasting, prepare the delicata squash. Place the squash rings onto a separate rimmed, metal baking sheet. Drizzle with 2 tablespoons of olive oil and toss to ensure each ring is lightly coated. Sprinkle generously with kosher salt.
-
When the chickpeas have about 20 minutes left to roast, slide the delicata squash into the lower third of your oven. Roast the squash for 10 minutes. Using a spatula, carefully turn each squash ring to ensure even browning. Rotate the pan and continue to roast for an additional 10 minutes, or until the squash is tender and slightly caramelized at the edges.
-
To assemble your Buddha Bowls, divide about 1/4 to 1/2 cup of prepared couscous into four large pasta bowls. Artfully arrange the roasted delicata squash, fresh baby kale blend, roasted tandoori chickpeas, and sliced avocado halves around the couscous. Finish by garnishing each bowl with chia seeds, chopped pistachios, and raisins.
-
Generously drizzle the creamy tahini dressing over top of all the ingredients. Before serving, taste and season your Buddha bowl with more salt to your preference, enhancing all the wonderful flavors.
FOR THE TAHINI DRESSING:
-
In a small mixing bowl, combine the grated garlic, tahini, fresh lemon juice, olive oil, and 2 tablespoons of warm water. Season with kosher salt and smoked paprika. Whisk vigorously until the dressing is completely smooth and creamy. If the dressing is too thick, gradually add the remaining warm water, 1 tablespoon at a time, until it reaches your desired pourable consistency.
