  • 1 teaspoon kosher salt
  • 1 teaspoon ground cardamom
  • 3/4 teaspoon ground sumac
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon ground clove
  • 1/8 teaspoon freshly grated nutmeg
  • 4 cloves garlic, grated
  • 1 large lemon, juiced
  • 2 tablespoons extra light olive oil, or other light flavorless oil
  • 10 to 12 wooden skewers, soaked for at least 1 or more hours in water

  • In a large bowl, combine the cut chicken pieces with kosher salt, ground cardamom, ground sumac, dried oregano, paprika, ground cinnamon, white pepper, ground clove, and freshly grated nutmeg. Grate in the garlic cloves and squeeze in the juice from the large lemon. Finally, pour in the extra light olive oil.
  • Toss vigorously with tongs to ensure all chicken pieces are thoroughly coated in the marinade. Cover the bowl and let the chicken marinate on the countertop for 20-30 minutes. Meanwhile, soak your wooden skewers for at least 1 hour.
  • Preheat your grill to medium-high heat (approximately 500°F).
  • Once the chicken has finished marinating, drain the soaked wooden skewers. Thread the chicken pieces onto the skewers, alternating between thigh and breast meat to ensure each skewer has a mix of textures and cooks evenly.
  • Carefully place the threaded skewers onto the hot grill grates. Immediately reduce the grill heat to medium and close the lid. Cook for a few minutes per side, rotating the kebabs with tongs until the chicken is fully cooked through and has nice grill marks. This typically takes about 5 to 8 minutes in total.
