  • 1 heaping tablespoon tomato paste
  • ½ cup uncooked quinoa, rinsed

FOR THE CHICKEN:

  • 4 chicken breast halves
  • ½ teaspoon kosher salt
  • 1 teaspoon lemon pepper

FOR THE SALAD:

  • 1 bunch kale, de-stemmed, chopped, rinsed and dried
  • 1 medium head romaine lettuce, chopped, rinsed and dried
  • ½ English cucumber, diced
  • ¼ cup Kalamata olives
  • ¼ cup feta cheese, crumbled
  • ¼ cup toasted almonds*, sliced
  • 1 recipe Greek dressing, more or less to preference

Instructions

  • In a skillet, heat about 2 teaspoons of olive oil on medium-low heat. Add the diced tomatoes, yellow onion, and a pinch of kosher salt. Sauté until tender, about 5 minutes, then stir in the heaping tablespoon of tomato paste. Set aside.
  • In a saucepan, combine the rinsed quinoa with the cooked tomato and onion mixture. Pour in 1 cup of water or broth and bring to a boil for 5 minutes. After boiling, cover the pan, leaving it on the burner, and turn off the heat. Let the quinoa sit undisturbed for 20 minutes before removing the lid and fluffing it with a fork.
  • The combined time for preparing the sofrito and quinoa should be around 35 minutes.

FOR THE CHICKEN:

  • While the quinoa is cooking and resting, prepare the chicken.
  • Season both sides of the chicken breast halves with salt and lemon pepper. Heat a large skillet with 2 tablespoons of olive oil over medium-high heat.
