Continue this process, adding another ladleful of hot broth only after the previous one has been almost entirely absorbed. This will take approximately 20-25 minutes, but focus on the texture of the rice rather than the clock. The rice should be al dente – tender with a slight bite in the center – and the risotto should be creamy and flowing, not dry or stiff.

The risotto should reach a consistency like this – rich, glossy, and perfectly creamy.

Once the rice has reached its ideal al dente stage and the consistency is perfect, remove the pan from the heat. This is the “mantecatura” stage, where you add the final elements to enrich the risotto. Pour in the reserved 1/3 cup of hot broth (this ensures the risotto remains fluid and creamy) and drop in two generous tablespoons of butter.

Season the risotto generously with 3/4 teaspoon of kosher salt and 1/4 to 1/2 teaspoon of freshly ground black pepper, adjusting to your taste.

  • 1/2 cup freshly grated Parmesan Cheese

Instructions

  1. Combine the broth and water in a pot. Heat over medium-low until hot (not boiling) and keep warm.
  2. Drizzle olive oil into your main pot (risotto pot if you have one) and heat over medium. Add the sliced mushrooms, stir, and cook until they shrink in size and are tender and slightly browned. Transfer the cooked mushrooms and their juices to a bowl and set aside.
  3. Add the sliced bacon to the same pot. Cook until crispy. Use a slotted spoon to transfer the crispy bacon to a paper towel-lined plate, leaving the rendered fat in the pot.
  4. Add the chopped leek, diced shallot, minced garlic, and fresh thyme to the bacon fat in the pot. Stir and cook for 3-4 minutes until the leeks and shallots are soft and translucent.
  5. Add the Arborio rice to the pot. Stir continuously for 3 minutes, toasting the rice until the edges become translucent.
  6. Pour in the dry white wine. Stir until the wine is completely absorbed by the rice.
  7. Begin adding the hot broth mixture gradually. Ladle in about 1/2 cup (one full ladle) of the hot broth to the risotto. Stir constantly until the liquid is almost completely absorbed by the rice.
  8. Continue this process, adding another ladleful of hot broth only after the previous one has been absorbed. Keep stirring until the rice is tender with a slight bite (al dente) and the risotto is creamy. This will take about 20-25 minutes.
  9. Once the rice is cooked to your liking, remove the pot from the heat. Stir in the remaining 1/3 cup of hot broth (if any was reserved for this purpose, otherwise ensure the last addition leaves enough liquid for creaminess), then add the 2 tablespoons of butter, salt, and pepper. Stir well.
  10. Stir in the 1/2 cup of freshly grated Parmesan cheese until melted and fully incorporated.
  11. Finally, add back in the cooked mushrooms and their reserved liquids. Stir gently to combine.
