  • shortbread cookies, (I used tahini shortbread cookies, approximately 2 cups crumbs)
  • 1/4 cup sugar
  • 2 to 3 tablespoons melted butter
  • 1 pinch kosher salt

FOR THE GOAT CHEESE CHEESECAKE:

  • 16 ounces softened cream cheese
  • 10 ounces softened goat cheese
  • cups sour cream, at room temperature
  • 4 large eggs
  • 1 cup sugar
  • 2 teaspoons pure vanilla extract

FOR THE VANILLA CRANBERRY SAUCE:

  • 2 cups cranberries
  • 3/4 cup sugar
  • 1 teaspoon cornstarch
  • 3/4 cup water
  • 1/2 teaspoon pure vanilla extract

Instructions 

FOR THE TAHINI SHORTBREAD CRUST:

  • In your food processor fitted with the blade attachment, add in 8 tahini shortbread cookies and process until they are fine crumbs — you will need approximately 2 cups total.
  • Add the cookie crumbs to a bowl and stir in the sugar, melted butter, and a pinch of salt until well combined.
  • Place the crumb mixture into a buttered 9-inch springform pan and firmly press it into the bottom and gently up the sides. Set aside.

FOR THE GOAT CHEESE CHEESECAKE:

  • Preheat your oven to 350℉ or (180℃).
  • Position your oven rack in the lower third (or the lowest position if your oven is small) of your oven.
  • In the bowl of your stand mixer, fitted with the paddle attachment, beat the softened cream cheese and goat cheese until creamy and fully blended. Scrape down the sides and bottom of the bowl as needed. Then, add in the sour cream and beat until just combined.
  • Next, add each egg, one at a time, mixing well after each egg is fully incorporated. Finally, add in the sugar and vanilla extract and mix until just combined, being careful not to overmix.
  • Place the cheesecake pan onto a rimmed sheet pan. Pour the cheesecake filling into the prepared crust and slide it onto the bottom rack or lower third of your oven. Bake for 55 to 60 minutes. As the crust is buttery, some butter may escape the springform pan, so having a sheet pan underneath is a good preventative measure.
  • If the top of the cheesecake begins to brown too quickly, gently tent it with aluminum foil to prevent excessive browning.
  • Remove the cheesecake from the oven and cool completely on a wire rack at room temperature before refrigerating overnight.

FOR THE VANILLA CRANBERRY SAUCE:

  • Combine the cranberries, sugar, cornstarch, and water in a 10-inch skillet. Heat over medium heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 10 minutes, stirring occasionally, until the sauce thickens and cranberries burst.
  • Remove the skillet from the heat and stir in the vanilla extract. Allow the sauce to cool completely before transferring it to an air-tight container for storage. This sauce can be made 2 to 3 days in advance and stored in the refrigerator.

TO SERVE:
