- 1/2 pound ground veal
- 2 tablespoons tomato paste
- 1 cup heavy cream
- 1 cup dry red wine, like Merlot or Pinot Noir
- 28 ounces canned crushed San Marzano tomatoes (or regular crushed tomatoes)
- 1/2 teaspoon freshly ground black pepper, or to taste
FOR THE RICOTTA MASCARPONE FILLING:
- 16 ounces whole milk ricotta cheese
- 8 ounces mascarpone cheese
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup shredded Mozzarella cheese (not pre-shredded)

Instructions
MAKE THE THREE-MEAT BOLOGNESE:
- In your food processor fitted with the blade attachment, pulse the carrots, celery, and onion until finely chopped.
- In a large Dutch oven, add 2 tablespoons of olive oil, the finely chopped carrots, celery, onions, and 1/2 teaspoon of kosher salt. Heat on medium. Stir, cover, and cook (stirring occasionally) until the vegetables are tender, about 5 to 8 minutes.
- Add in the minced garlic, fresh thyme, and bay leaves. Stir and cook for 2 minutes until fragrant.
- Next, add in 1/2 pound each of ground beef, pork, and veal. Use a wooden spoon to break up the meat into crumbles, being careful not to crush the bay leaves. Cook until the meat is no longer pink. If excess fat accumulates, you may remove up to half, but I recommend leaving it for maximum flavor.
- Stir in the 2 tablespoons of tomato paste and cook for 2 to 3 minutes. Pour in the 1 cup of heavy cream. Increase the heat to medium/medium-high and simmer until most of the heavy cream evaporates and the mixture is only slightly creamy, about 10 to 15 minutes. Pour in the 1 cup of dry red wine and continue to simmer for about 10-15 minutes until most of the wine evaporates.
- Lastly, add in the 28 ounces of crushed San Marzano tomatoes. Stir, cover, and increase the heat to high to bring to a boil. Reduce the heat to low and simmer, stirring every 20-25 minutes, for 2 hours. For a richer sauce, uncover and simmer for the last hour to thicken.
- Allow the sauce to cool completely before assembling the lasagna. Making the bolognese a day in advance allows the flavors to develop even more overnight. Remember to remove the bay leaves before assembly.
MAKE THE RICOTTA FILLING:
- In a medium bowl, stir together the whole milk ricotta cheese, mascarpone cheese, freshly grated Parmesan cheese, shredded mozzarella cheese, and the two large eggs. Season with 1/2 teaspoon of black pepper. Keep the mixture refrigerated until ready to use.
ASSEMBLE THE LASAGNA:
- Preheat your oven to 375℉ (190℃). Lightly spray a lasagna pan with olive oil spray.
- Layer 1: Measure 1¼ cups of the cooled bolognese sauce and spread it evenly onto the bottom of your pan. Top with 4 oven-ready lasagna noodles.
