Slide the baking sheet onto the middle rack of your preheated oven and roast for 45 minutes to 1 hour, or until the tomatoes are softened and slightly caramelized.
  3. Meanwhile, melt the unsalted butter (or add olive oil if preferred) in a deep-sided pot or Dutch oven over medium heat. Once melted, add the finely chopped yellow onion, carrot, and celery.
