This is one of those dinners that’s not only unfussy but especially savory.
Chicken tossed in barbecue sauce, topped with cheese which is then baked until melted. Finishing it off with crispy chopped bacon, fresh tomatoes and green onions. I’ve made this so many times and it never gets old. I’ve made it with from-scratch barbecue and sugar free, chicken bacon and regular and with full fat cheese and reduced. And I’m sure you could use chicken or turkey bacon as well.
All ways were completely phenomenal, so this dish is truly customizable to your diet.

To cook this skillet Monterrey chicken recipe set out;
- bacon
- thin cut boneless skinless chicken breast halves
- kosher salt
- freshly ground black pepper
- barbecue sauce
- cheddar jack cheese
- Roma tomato
- green onions
Start by adding 4 slices of diced bacon to a cold skillet. Heat on medium heat and slowly render out that fat. Cook until the bacon is crispy before using a slotted spoon to transfer the bacon to a paper towel lined plate. Drain off all but 1 tablespoon of bacon fat.
Preheat your oven to 375℉ (or 190℃).
Meanwhile season 4 thin cut chicken breast halves with kosher salt and freshly ground black pepper.
To the hot bacon fat, add the seasoned chicken breasts. Work in batches, if your skillet isn’t large enough to cook all four at once. Cook for 6 to 8 minutes before turning and continuing to cook for an additional 5 to 6 minutes or until the chicken is fully cooked and no longer pink.
Then, once the chicken is fully cooked, transfer it to a clean platter for a moment.
Pour in 1/4 cup of the barbecue sauce, using a wooden spatula to scrape up any browned bits on the bottom of the skillet.
Add the chicken back into the skillet.
Top with remaining 1/4 to 1/2 cup or more of barbecue sauce.
Next, top each chicken breast with 1/4 cup of cheddar jack cheese and then slide the oven-safe skillet into your preheated oven.
Bake for 6 to 8 minutes or until the cheese has melted.
Finally, top the skillet Monterrey chicken with the chopped bacon, fresh tomatoes and sliced green onions.
