Pineapple Salsa at Home

Sometimes the most simple recipes are the tastiest.

And this time of year is my go-to because produce is at its prime! Now if you’re wondering why I waited until after Cinco de Mayo to share my pineapple salsa recipe, well that would be because I don’t specifically use it for Mexican-themed meals. Don’t get me wrong, I could do some damage with a bowl of this salsa and a bag of Siete chips. But it’s also savory on grilled chicken, fish or shrimp and pork. I’ve even served it with my flank steak tacos.

What A regular here most about this salsa is that it’s so fresh, sweet with a little spicy kick from the jalapeños.

For this Pineapple Salsa Recipe Set out:

  • fresh pineapple
  • red onion
  • jalapeño
  • cilantro
  • fine salt
  • lime juice

In a bowl, add 1 pound fresh pineapple that is diced into small cubes. Then add in 1/2 cup finely chopped red onion, 1 (large) jalapeño (seeded for less heat) diced small. Lastly add in 1/4 cup chopped cilantro.

Add in a pinch of fine salt.

And squeeze in the juice of 1/2 a lime.

Toss and serve!

I prefer to cook this and serve immediately. The texture can change a bit if you make it too far in advance.

Serve with your regular tortilla chips as an appetizer, or as a topping to your regular grilled chicken, seafood, pork or steak recipe.
