  2. In a mixing bowl, measure and add oats, oat flour, brown sugar, walnuts, raisins, cinnamon, nutmeg and salt. Stir to combine.
  3. Pour in melted butter and stir until incorporated.
  4. Spread the cookie mixture out onto the prepared pan and bake for 12 to 15 minutes or until crumbles form. Stirring the mixture every 5 minutes. The cookie crumble will further harden as it cools.

TO MAKE THE NECTARINES:

  1. Spray a small baking dish with coconut or other nonstick baking spray.
  2. Place the nectarines into the dish, cut side up, and dot each one with a square of butter. Sprinkle with 1/2 teaspoon brown sugar (or more if you’d like) and bake on the middle rack for 30 to 40 minutes or until the nectarines are super soft.
  3. Once baked, remove and brush the cut side with the brown sugar butter mixture that is inside each nectarine.
