  3. Then, sauté the diced red and green bell peppers and diced yellow onion in the same skillet with a pinch of kosher salt and freshly ground black pepper until tender, about 5-8 minutes. Add a teaspoon or more of the reserved bacon fat back to the skillet as needed. Stir in the minced garlic and chopped fresh thyme, cooking for an additional 1 to 2 minutes until fragrant.
  4. Move your oven rack to the top position and preheat your broiler on high.
  5. Add the cut potatoes, cooked bacon, and sausage back into the skillet with the sautéed peppers and onions. Season with a couple more pinches of salt and black pepper and toss to combine evenly. Spread the hash into an even layer in the skillet and sprinkle generously with the grated sharp cheddar cheese.
