Unveiling the Star Ingredients of Our Fall Medley
The beauty of this dish lies in its thoughtfully selected ingredients, each playing a crucial role in creating a symphony of flavors and textures. Let’s take a closer look at the components that make this roasted fall medley truly exceptional:

For the Vibrant Roasted Medley You Will Need:
- Butternut Squash: The king of fall vegetables, butternut squash brings a natural sweetness and creamy texture when roasted, forming a robust base for our medley.
- Brussels Sprouts: Often misunderstood, roasted Brussels sprouts transform into tender, slightly crispy bites with a delightfully nutty flavor, a perfect counterpoint to the sweeter elements.
- Carrots: Roasting carrots caramelizes their natural sugars, intensifying their sweetness and adding a lovely chewiness.
- Red Onion: As it roasts, red onion mellows and sweetens, contributing a subtle savory depth without being overpowering.
- Broccoli Florets: These cruciferous gems add a pleasant texture and a touch of bitterness that balances the overall sweetness of the dish.
- Red Grapes: A surprising but absolutely essential ingredient! Roasting red grapes makes them burst with concentrated sweetness and a delicate juiciness, adding an unexpected layer of flavor that elevates the entire medley.
- Olive Oil, Salt & Pepper: The foundational seasonings that bring out the best in the vegetables, promoting beautiful caramelization and enhancing natural flavors.
- Reduced Balsamic Vinegar (Glaze): A key player for its tangy, slightly sweet, and concentrated flavor. It coats the roasted vegetables, adding a gourmet touch and balancing the honey.
- Honey: Provides a sticky, sweet glaze that complements the balsamic vinegar, creating that signature honey-balsamic flavor profile.
For the Creamy Goat Cheese Polenta You Will Need:
- Whole Milk: The base for our polenta, whole milk contributes to its rich, creamy texture and comforting mouthfeel.
- Low-Sodium Vegetable Broth: Adds a layer of savory depth to the polenta, ensuring it’s not just creamy but also flavorful.
- Polenta (Coarse Grits): The star of the show for the base! When cooked slowly, it absorbs the liquids and becomes incredibly smooth and comforting.
- Kosher Salt: Essential for seasoning the polenta, enhancing all its flavors.
- Goat Cheese Log (not pre-crumbled): The secret to truly luxurious polenta. As it melts, it imparts a distinct tangy creaminess that pairs exquisitely with the roasted medley. Using a log ensures better melt and texture.

Mastering the Art of Roasting and Creamy Polenta: A Step-by-Step Guide
Crafting this delightful dish is a straightforward process, broken down into two main components: roasting the vibrant fall medley and preparing the irresistibly creamy goat cheese polenta. Follow these detailed steps to achieve culinary perfection.
Preheat your oven to a robust 400℉ (or 200℃). A hot oven is crucial for achieving that beautiful caramelization and tender-crisp texture on your vegetables. While the oven preheats, you can begin preparing your medley ingredients.

In a generously sized mixing bowl, combine the diced butternut squash (aim for uniform 1-inch pieces for even cooking), trimmed and halved Brussels sprouts, large carrots (either rolled cut or roughly chopped), chopped medium red onion, and fresh broccoli florets. Drizzle with 2 tablespoons of high-quality olive oil. Season generously with a few pinches of kosher salt and freshly ground black pepper. Toss everything together thoroughly until all the vegetables are lightly coated in oil and seasoning. This ensures every piece gets beautifully caramelized.

Evenly spread the seasoned vegetables onto a large, rimmed metal baking sheet. Avoid overcrowding the pan; if necessary, use two baking sheets to ensure the vegetables roast rather than steam. Slide the sheet into your preheated oven and roast for an initial 20 minutes. About halfway through, around the 10-minute mark, give the pan a good shake or use a spatula to rotate the vegetables. This critical step ensures even cooking and browning on all sides.

After the first 20 minutes of roasting, carefully remove the pan from the oven. At this point, increase your oven temperature to 425°F (218°C). Gently spray your red grapes with a touch of olive oil spray. Make some space on the baking sheet among the par-roasted vegetables and add the grapes. Return the pan to the oven and continue roasting for an additional 10 to 15 minutes. Keep an eye on the grapes – you want them to soften and begin to burst, releasing their sweet juices, and the vegetables to be tender-crisp with caramelized edges.

While your vegetables and grapes are roasting, you can begin preparing the creamy goat cheese polenta. In a deep-sided saucepan or a large, sturdy skillet, combine 2 cups of whole milk with 1 cup of low-sodium vegetable broth. Bring this mixture to a gentle boil over medium-high heat, whisking frequently to prevent the milk from scorching on the bottom of the pan.

Once the milk and broth mixture is boiling, slowly whisk in 1 cup of polenta (coarse grits) and 3/4 teaspoon of kosher salt. Continue to whisk constantly as you add the polenta to prevent lumps from forming. Reduce the heat to low and continue to stir often. The polenta will begin to thicken as it swells and absorbs the liquids. This process takes about 5-7 minutes, during which you should maintain a consistent, gentle stir.

As the polenta continues to cook and absorb the liquids, becoming delightfully thick and creamy, it’s time for the goat cheese. Add 4 ounces of a goat cheese log (preferably not pre-crumbled, as it melts more smoothly) into the simmering polenta. Stir continuously until the goat cheese is fully melted and incorporated, resulting in a velvety-smooth and incredibly creamy polenta. Keep the polenta warm over very low heat, stirring occasionally, until you are ready to serve. If it becomes too thick, you can whisk in a splash of warm milk or broth to loosen it up.

Once the roasted vegetables and grapes are perfectly tender and caramelized, remove them from the oven. Carefully transfer all the roasted medley components, including the grapes, back into the large mixing bowl you used earlier. Drizzle 2 tablespoons of reduced balsamic vinegar (or balsamic glaze) and 1 tablespoon of honey over the warm medley. Toss gently but thoroughly to combine, ensuring every piece is coated with the sweet and tangy glaze. The warmth of the vegetables will help the glaze adhere beautifully.

Assembling and Serving Your Culinary Masterpiece
Now for the grand finale! To serve, spoon a generous portion of the warm, creamy goat cheese polenta into individual bowls. Top each serving with a bountiful scoop of the roasted honey balsamic fall medley. For an extra touch of freshness and flavor, garnish with micro greens or chopped fresh parsley, and a sprinkle of freshly ground black pepper. A final drizzle of balsamic glaze can also add a beautiful presentation and intensify the tangy notes. Take a moment to admire your work, then savor the symphony of flavors and textures that await. It’s truly love at first bite.

Tips for the Perfect Roasted Honey Balsamic Fall Medley
- Uniform Cuts: For even roasting, ensure your butternut squash, carrots, and Brussels sprouts are cut into roughly the same size pieces. This prevents some vegetables from becoming mushy while others are still hard.
- Don’t Crowd the Pan: Overcrowding a baking sheet leads to steaming instead of roasting. If you have a large batch of vegetables, divide them between two baking sheets or roast in batches. Air circulation is key for crispy, caramelized results.
- High Heat is Your Friend: Starting at 400°F and increasing to 425°F helps achieve that desirable char and tenderness.
- Whisk Polenta Constantly: Especially in the initial stages, constant whisking prevents lumps and ensures a smooth, creamy texture. Don’t rush it!
- Quality Goat Cheese: Opt for a good quality goat cheese log. The fresh, tangy flavor of a log melts beautifully and integrates seamlessly into the polenta, providing a superior creamy consistency and taste compared to pre-crumbled varieties.
- Adjust Sweetness/Tanginess: Feel free to adjust the amount of honey and balsamic glaze to your personal preference. Add more honey for a sweeter finish or more balsamic for extra tang.
- Make Ahead Option: The roasted vegetable medley can be prepared ahead of time and gently reheated. The polenta is best served fresh but can also be made ahead and gently rewarmed with a splash of milk or broth.
Creative Variations & Substitutions for Your Fall Medley
While this recipe is perfect as is, it’s also incredibly versatile! Feel free to experiment with these ideas to customize it to your taste or what you have on hand:
- Vegetable Swaps: Instead of or in addition to the suggested vegetables, consider parsnips, sweet potatoes, red bell peppers, cauliflower, or even sliced apples for extra fruitiness.
- Different Fruits: If red grapes aren’t available, try sliced figs, cranberries, or even pear wedges for a different sweet and tangy dimension.
- Herb Infusion: Add fresh rosemary or thyme sprigs to the baking sheet during roasting for an aromatic boost. Fresh sage would also be lovely.
- Cheese Alternatives: If goat cheese isn’t your preference, creamy feta, grated Parmesan, or even a smoked gouda could offer interesting variations in the polenta.
- Add Some Heat: A pinch of red pepper flakes tossed with the vegetables before roasting will add a subtle kick.
- Boost the Protein: For an even heartier meal, stir in some cooked chickpeas, white beans, or lentils into the medley after roasting, or serve with a side of pan-seared halloumi cheese.
- Vegan Adaptation: To make this dish entirely vegan, substitute the whole milk with a plant-based milk (like almond or oat milk) and the goat cheese with a dairy-free cream cheese alternative or nutritional yeast for a cheesy flavor. Ensure your balsamic glaze and honey are vegan-friendly (maple syrup can replace honey).
