  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  1. Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper or a silicon mat.
  2. In a small bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In the bowl of your stand mixer, fitted with your paddle attachment, add in the softened butter and mix until creamy. Next, add in the dark brown sugar and mix until light and creamy, about 2 minutes.
  4. Then add in the vanilla and one egg at a time, mixing well after each egg. Scrape down the sides and bottom of the bowl to ensure everything is well combined.
  5. Next, gradually add in half of the flour mixture, mixing on low speed until all ingredients are incorporated. Then repeat with the remaining flour, mixing until just combined. Scrape down the sides and bottom of the bowl one more time.
  6. Gradually add in the quick oats, mixing until combined. Then, using a sturdy spatula or wooden spoon, stir in by hand the toffee bits, coconut flakes, and chocolate chips until evenly distributed throughout the thick dough. Scrape down the sides and bottom of the bowl one last time.
  7. Use a 2-tablespoon cookie scoop (for regular chocolate chips) or a 3-tablespoon scoop (for chocolate chunks) to measure the cookie dough, placing balls an inch or so apart on the prepared cookie sheets.
  8. Bake for 8-10 minutes, rotating the pan halfway through for even baking. Let cool on the pan for at least 5 minutes before removing, as the melted toffee may be sticky.

*If you only have old-fashioned oats, pulse them a few times in a food processor until broken down, but not flour-like. Note that 3 cups of old-fashioned oats will not yield 3 cups of quick cooking oats after processing; adjust volume as needed.
