Why Cauliflower Steaks are Your Next Go-To Dish
Cauliflower has truly earned its superstar status in the culinary world, and for good reason. When sliced into thick “steaks” and prepared correctly, it offers a surprisingly meaty texture that makes it a fantastic vegetarian alternative to traditional protein. These aren’t just any roasted vegetables; they are substantial, full of character, and wonderfully versatile. Our recipe elevates humble cauliflower by searing it to achieve a beautiful golden crust, locking in moisture and flavor, before roasting it to tender perfection. The edges caramelize beautifully, providing delightful crispy bits that add another layer of texture to each bite.
This dish is not only delicious but also incredibly wholesome. Cauliflower is brimming with vitamins C and K, fiber, and antioxidants, making it an excellent choice for a healthy diet. Paired with our nutrient-rich walnut parsley pesto, you get a powerhouse of flavor and nutrition. It’s naturally low-carb and gluten-free, catering to a variety of dietary needs without compromising on taste. Expect a delightful aroma to fill your kitchen as this dish cooks – a scent that, while healthy, is so inviting it might just convert even the most skeptical vegetable-averse family members!
From Spring Cleaning to Culinary Inspiration
Sometimes, the greatest culinary inspirations spring from unexpected places. This past weekend, amidst a much-needed spring cleaning spree, inspiration struck. I tackled my office, hanging new curtains and finally organizing my extensive collection of props and dishes. Then, with my husband’s invaluable help (and his trusty sawzall!), we ventured into the garage, finally unpacking the last few boxes from our move *ahem* two years ago. Among the relics, I rediscovered two wooden cilantro crates I’d been hoarding. With a bit of creative construction, cutting, and gluing, we fashioned a rather cool new photography backdrop. The only question now is: to stain or not to stain?
This burst of productivity and organization in my home somehow spilled over into the kitchen. It brought a fresh perspective, sparking an idea for a dish that was both simple and deeply satisfying. And as luck would have it, the ingredients were already waiting.
The Magic of Walnuts: A Pesto Revelation
Earlier in January, the wonderful folks at California Walnuts sent me a generous bag of walnuts. They had been patiently waiting in my fridge for the perfect moment, which arrived precisely when the vision for this recipe crystallized. It was one of those fortunate kitchen moments where I didn’t need a special trip to the grocery store; I simply had all the components on hand. It also happened to be #MeatlessMonday, making this dish a perfect two-birds-one-stone situation. Talk about winning!
Walnuts are the secret weapon in this pesto, offering a rich, earthy flavor and a creamy texture when blended. To truly unlock their full potential, toasting them is a crucial step. This simple process enhances their nutty aroma and deepens their flavor profile, making your pesto incredibly complex and irresistible.
You’ll need a full cup of shelled walnuts to create a robust and flavorful pesto that coats each cauliflower steak beautifully.
Begin by adding the walnuts to a dry skillet over medium heat. This allows them to slowly warm and release their natural oils and fragrances.
Stir them occasionally, keeping a close eye on them, until they are lightly browned and incredibly fragrant. This usually takes about 5-8 minutes. Be careful not to burn them!
Once perfectly toasted, scoop the walnuts into a bowl and set them aside. They’ll be ready to join the pesto party later.
Crafting the Perfect Cauliflower Steaks
Preparing the cauliflower steaks is easier than you might think. Start with a large head of cauliflower. Carefully slice it into thick, 1-inch “steaks” by cutting straight through the core. This helps keep the florets intact during cooking. Don’t worry if a few smaller pieces break off; those crispy little bits are excellent for garnishing!
In the same skillet you used for the walnuts (no need to clean it, the nutty residue adds flavor!), add a tablespoon of good quality olive oil. Once hot, carefully place the cauliflower slices into the pan and sear each side for 3-4 minutes until they achieve a beautiful golden-brown color. This initial sear is essential for developing a deep, savory flavor and a slightly crispy exterior. Season with a pinch of kosher salt and freshly ground black pepper on both sides as they sear.
Once seared, transfer the cauliflower steaks to a rimmed baking sheet. Drizzle with a little more olive oil to ensure they don’t dry out, then roast them in a preheated 450-degree oven for 15-20 minutes, or until they are tender when pierced with a fork and the edges are delightfully caramelized. Roasting completes the cooking process, ensuring the cauliflower is soft on the inside while maintaining its integrity.
Whipping Up the Luscious Walnut Parsley Pesto
While your cauliflower steaks are roasting, it’s time to prepare the star condiment: the vibrant walnut parsley pesto. This pesto isn’t just a topping; it’s a flavor explosion that brings the entire dish to life with its fresh, herbaceous, and nutty notes. It’s surprisingly simple to make in a food processor, coming together in mere minutes.
To begin, add the roughly chopped garlic cloves, green onions (using both the light and dark green parts for maximum flavor), fresh parsley, and grated Parmesan cheese to the bowl of your food processor. These fresh ingredients form the aromatic base of your pesto.
Don’t forget your beautifully toasted walnuts! Add them to the food processor along with a couple of pinches of red pepper flakes for a subtle kick and several grinds of fresh black pepper. The walnuts will need a bit of time under the blades to break down and contribute their creamy texture.
Secure the lid on your food processor and begin to blend. As it processes, slowly pour in a steady stream of good quality olive oil through the feed tube. Continue blending until the pesto reaches your desired consistency – smooth and creamy, or slightly chunkier if you prefer a bit more texture.
Periodically stop the food processor and scrape down the sides to ensure all ingredients are incorporated evenly. Taste the pesto and season with kosher salt as needed. Blend again until it’s perfectly smooth and rich.
This vibrant pesto is incredibly versatile! Beyond topping your cauliflower steaks, you can smother it on toasty warm bread, toss it with your favorite pasta for a quick meal, or even simply enjoy it straight from the spoon (it’s that good!). Its fresh, herbaceous notes make it a perfect accompaniment to so many dishes.
Serving Your Masterpiece
Once the roasted cauliflower steaks emerge from the oven, tender and golden, it’s time for the grand finale. Carefully transfer them to individual plates, ready to be adorned with the magnificent pesto.
Spoon generous dollops of the freshly made walnut parsley pesto over each roasted cauliflower steak. For an extra touch of richness and visual appeal, drizzle a smidgen of high-quality olive oil over the pesto. If you have any small, crispy cauliflower bits that broke off during slicing or searing, sprinkle them on top as a delicious garnish – they add a wonderful textural contrast.
These roasted cauliflower steaks with toasted walnut parsley pesto are truly a marvel. They can shine as a quick, light, and fulfilling main course, or serve as a fantastic, flavorful side dish alongside grilled fish, roasted chicken, or any other protein. Their lightness, combined with the bold flavors of the pesto, makes for an incredibly satisfying meal. The harmonious blend of tender cauliflower, crunchy toasted walnuts, and fresh parsley creates a culinary experience that is both healthy and deeply enjoyable.
Roasted cauliflower steaks and pesto for life – a motto we can certainly live by!

Equipment
-

Instructions
-
Preheat your oven to 450°F (230°C).
-
In a dry skillet, add the walnuts and toast until fragrant over medium heat, stirring occasionally. This should take about 8 minutes. Remove the toasted walnuts to a small bowl and set aside.
-
Increase the heat to medium-high. In the same skillet, add a tablespoon of olive oil. Sear the cauliflower steaks in batches of two until golden on both sides, about 4 to 5 minutes per side. Season each side with salt and pepper as you sear.
-
Place the seared cauliflower steaks onto a rimmed sheet pan. Drizzle with a little more olive oil and roast in the preheated oven for 15-20 minutes, or until tender and lightly caramelized.

Meanwhile, prepare the pesto. Add the roughly chopped garlic cloves to a food processor. Then add the toasted walnuts, fresh parsley, chopped green onions (light and dark green parts), grated Parmesan cheese, crushed red pepper flakes, and fresh black pepper. Secure the lid.
-
Turn on the food processor and slowly pour in the olive oil in a steady stream through the feed tube. Stop occasionally to scrape down the sides of the bowl, then continue blending until the pesto is smooth and creamy, or to your preferred consistency.
-
Taste the pesto and season with kosher salt as needed to enhance all the flavors.
-
Remove the roasted cauliflower steaks from the oven. Serve them immediately with generous spoonfuls of the fresh walnut parsley pesto. For an extra touch, garnish with any tiny crispy roasted cauliflower bits and a light drizzle of additional olive oil.
