Any extra warm glaze can be served on the side, allowing guests to drizzle even more of this exquisite sauce over their tender slices of ham.

Why Choose a Homemade Cranberry Glaze?
If you’re still relying on the small packet of glaze that often accompanies store-bought hams, it’s time for a delicious upgrade. This homemade cranberry glaze isn’t just “better”; it’s a game-changer. It’s incredibly simple to prepare, yet it delivers a depth of flavor and a stunning visual appeal that packet glazes simply cannot match. The rich, ruby-red hue alone is enough to captivate your guests, but the taste is what will truly make this ham unforgettable. Each bite offers a delightful balance of sweet, tangy, and subtly spicy notes that perfectly complement the savory ham.
The journey to this delectable glaze begins with fresh, plump cranberries. These seasonal gems are simmered gently with bright orange juice, rich maple syrup, and sweet dark brown sugar until they soften beautifully and burst open, releasing their natural tartness. This fruit-forward base is then pureed to a smooth consistency, creating a vibrant sauce that’s both visually appealing and incredibly versatile. The final magical touches come from Dijon mustard, which adds a sophisticated tang, apple cider vinegar for a bright acidity, aromatic ground clove for warmth, and a subtle kick of cayenne pepper that rounds out the flavor profile without overwhelming it. Think of it as a refined, pureed cranberry sauce, specifically designed to coat your ham in a glorious, sticky sheen.

One of the best parts about this recipe is the generous amount of glaze it yields. Not only is there plenty to brush over your ham for that irresistible caramelized exterior, but you’ll also have extra to serve on the side. Warming up the leftover glaze and offering it as an accompaniment allows everyone to add more of that sweet, tangy goodness to their plate. This simple, sweet, and tangy glaze is undeniably superior to any packet alternative, proving that a little effort in the kitchen can lead to extraordinary results that truly impress.

Essential Ingredients for Your Cranberry Glazed Ham
Crafting this incredible Cranberry Glazed Ham requires a thoughtful selection of ingredients, each playing a crucial role in developing its complex and delicious flavor. Here’s a closer look at what you’ll need:
- Fresh Cranberries: These tart berries, typically found in the produce section during the fall and winter months, are the star of our glaze. Their natural acidity provides a crucial counterpoint to the sweetness, creating a balanced and vibrant flavor.
- Dark Brown Sugar: More than just a sweetener, dark brown sugar contributes a rich, molasses-like flavor and subtle caramel notes that add depth to the glaze. It also helps achieve that desirable sticky, caramelized texture on the ham.
- Orange Juice: This ingredient introduces a bright, distinct citrusy flavor that beautifully complements the cranberries. For an even more intense orange aroma, consider adding a touch of fresh orange zest during the simmering process.
- Pure Maple Syrup: Opt for pure maple syrup (not pancake syrup) to impart a natural, earthy sweetness and a signature maple flavor that pairs wonderfully with both cranberries and ham.
- Dijon Mustard: A surprising but essential addition, Dijon mustard provides a savory tang and a hint of spice, cutting through the sweetness and adding a layer of sophistication to the glaze.
- Apple Cider Vinegar: Lending brightness and a touch of acidity, apple cider vinegar enhances the overall tartness of the glaze and helps to tenderize the ham’s surface slightly.
- Ground Clove: A pungent and warm spice, ground clove offers a distinct and intense aroma and flavor that is a classic pairing with ham, especially during the holidays. Use sparingly as its flavor is potent.
- Cayenne Pepper: For a subtle yet noticeable kick and an added layer of flavor complexity, a pinch of cayenne pepper is included. It won’t make the glaze overtly spicy but will awaken the palate.
- Cooked Ham: For this recipe, a 14 to 15-pound hardwood smoked, bone-in, spiral-cut ham is recommended. Spiral-cut hams are pre-sliced, making them easy to serve and allowing the glaze to penetrate deep into the meat.

Crafting Your Homemade Cranberry Glaze
Preparing this exquisite cranberry glaze is a straightforward process that yields incredibly rewarding results. Follow these simple steps to create the perfect coating for your holiday ham:
First, begin by rinsing 8 ounces of fresh cranberries thoroughly under cool water to remove any debris. This ensures your glaze starts with the freshest possible ingredients.

Next, transfer the rinsed cranberries to a 3-quart saucepan. Add 1/2 cup of dark brown sugar, 1/4 cup of orange juice, and 1/4 cup of pure maple syrup to the saucepan. These ingredients will form the sweet, fruity base of your glaze. For an even more pronounced citrus aroma and flavor, consider adding a teaspoon of fresh orange zest at this stage.

Stir all the ingredients together in the saucepan to combine them well. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Continue to simmer, stirring occasionally, until the cranberries soften and begin to burst open. This process usually takes about 8-10 minutes. The bursting cranberries release their juices and pectin, which will help thicken the glaze.

Once the cranberries have softened and burst, remove the saucepan from the heat. This prevents the sugars from over-caramelizing and burning.

While the mixture is still warm, stir in 1/4 cup of apple cider vinegar, 2 heaping tablespoons of Dijon mustard, 1/4 teaspoon of ground clove, and 1/4 teaspoon of cayenne pepper. These additions are key to balancing the sweetness with tangy, savory, and spicy notes.

Now, it’s time to achieve that silky-smooth texture. If you own an immersion blender, carefully use it directly in the saucepan to puree the cranberries until completely smooth. If you don’t have an immersion blender, carefully transfer the mixture to a standard blender. Remove the center plug from the blender lid to allow steam to escape (this is crucial for hot liquids to prevent pressure buildup). Cover the opening with a clean kitchen towel to prevent splatters, and then blend until the glaze is perfectly smooth. Be cautious when blending hot liquids.

Marvel at the stunning, vibrant color of your freshly made cranberry glaze! It’s ready to transform your ham into a culinary masterpiece. This homemade glaze is so much more flavorful and visually appealing than anything from a packet.

Glazing and Roasting the Perfect Ham
With your magnificent cranberry glaze ready, it’s time to prepare and roast your ham to perfection. This process ensures the ham is heated through and coated with a delicious, caramelized crust.
Begin by preheating your oven to 325℉ (160℃). Lightly spray the wire rack of your roasting pan with nonstick spray to prevent the ham from sticking and ensure easy cleanup. Remove all packaging from your ham and discard any plastic or netting. Place the ham flat side down or cut side down on the prepared roasting rack. This position helps retain moisture and keeps the ham stable.

Portion out some of your freshly made cranberry glaze into a small bowl for brushing. You won’t need all of it for the initial glaze application, as some will be reserved for later basting and serving.

Using a pastry brush, generously brush a layer of the cranberry glaze evenly over the entire surface of the ham. Ensure all exposed surfaces are coated, as this first layer will begin to caramelize and build flavor during the initial bake.

Carefully transfer the roasting pan with the glazed ham to the lowest rack in your preheated oven. Bake for an initial 90 minutes. This slow roasting allows the ham to heat gently and the first layer of glaze to set and caramelize.

Keep an eye on your ham during this initial baking period. If you notice the ham or glaze browning too quickly or becoming too dark, loosely cover it with aluminum foil. This will prevent burning while allowing the ham to continue heating through.

After the first 90 minutes, remove the ham from the oven (and uncover if it was foiled). The ham should now have a beautiful, deep red hue, a testament to the cranberry glaze beginning to work its magic.

Now, it’s time for the continuous glazing process. Brush the ham generously with more of the cranberry glaze. Return it to the oven and continue baking for an additional 45 minutes, brushing with more glaze every 15 minutes. This layering technique builds up that sticky, sweet, and tangy crust we’re aiming for. Continue baking until the ham is heated through, reaching an internal temperature of 140℉ (60℃) for pre-cooked hams.

Once baked, the ruby red glaze should be stunning – sticky, glossy, and caramelized to perfection. This visual appeal is as important as the taste, promising a truly festive centerpiece.

Before serving, allow the ham to rest for 10-15 minutes after removing it from the oven. This allows the juices to redistribute, resulting in a more tender and flavorful ham. Slice the ham along the pre-cut lines (for spiral-cut) or carve it as desired, and serve it with the warmed reserved glaze on the side for dipping or drizzling.
