  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup buttermilk
  • teaspoon vanilla extract
  • 1 cup unsalted butter, softened to room temperature
  • cup granulated sugar
  • 4 eggs, at room temperature
  • pounds strawberries, sliced and divided
  • 1/4 cup sugar, (I used lavender sugar) or substitute with granulated or light brown sugar
  • 1 recipe homemade whipped cream

Instructions 

FOR THE CAKE:

  • Preheat your oven to 350℉ (or 180℃) and line and grease two 9-inch round cake pans.
  • In a mixing bowl, combine the flour, baking powder, baking soda and salt. Whisk well to combine and set aside.
  • To the buttermilk, add the vanilla extract and stir to combine. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment, add the softened butter and granulated sugar. Mix on medium-low speed for 5 minutes until the mixture is creamy and pale in color.
  • Add the room temperature eggs one at a time, mixing well after each addition until fully incorporated.
  • Alternate adding 1/3 of the flour mixture, then 1/2 of the buttermilk mixture to the butter mixture, mixing just until incorporated after each addition. Repeat this process, starting with flour and ending with flour. Be careful not to overmix.
  • Divide the batter evenly among the two prepared cake pans. Bake on the middle rack of your preheated oven for 25 to 28 minutes, or until a tester inserted into the center comes out with only a few moist crumbs attached.
  • Allow the cakes to cool in the pans for 10-20 minutes, then invert onto a wire rack to cool completely. (Included at least 1 hour for cooling time.)

FOR THE LAVENDER STRAWBERRIES:

  • Place sliced strawberries into a large mixing bowl. Toss with 1/4 cup lavender sugar (or sugar of your choice). Let sit for 30 minutes to overnight (depending on timing and preference), stirring every so often. The longer they macerate, the softer and more syrupy they will become.

TO BUILD THE CAKE:

  • Once the cake layers are completely cooled, use a skewer or chopstick to poke numerous holes in the top of each cake. Carefully spoon the strawberry liquids (released during maceration) over top and into the holes, allowing the cake to absorb the delicious juices.
  • Place the first cake layer on your serving plate. Top with half of the homemade whipped cream and spread it evenly to the edges of the pound cake.
  • Then, carefully arrange half of the macerated strawberries over the whipped cream.
  • Gently place the second layer of cake on top of the strawberries and lightly press to secure. Repeat with the remaining strawberry liquids (if any), whipped cream, and strawberries.
  • Keep the assembled cake chilled in the refrigerator until ready to serve.
