Gather Your Ingredients for Homemade Pumpkin Spice Bagels

Crafting these delectable Air Fryer Pumpkin Spice Bagels requires a straightforward list of ingredients, many of which you likely already have in your pantry. The magic lies in the combination of a simple yogurt-based dough with the comforting flavors of pumpkin and spice. Here’s what you’ll need to create these autumn-inspired treats:

  • Unbleached All-Purpose Flour: The foundation of our chewy bagel dough. Using unbleached flour often gives a slightly softer crumb.
  • Baking Powder: Our leavening agent, providing lift and a tender texture without yeast.
  • Pumpkin Spice: The star of the show! We highly recommend homemade pumpkin spice for the freshest, most vibrant flavor, but a good quality store-bought blend works too.
  • Kosher Salt: Essential for balancing the sweetness and enhancing all the other flavors in the dough.
  • Plain Nonfat Greek Yogurt: This is the secret ingredient for a healthier, protein-packed dough that yields a wonderful chewy texture. Ensure it’s plain and nonfat for the best results.
  • Pumpkin Puree: Adds natural sweetness, moisture, and that unmistakable pumpkin flavor. Make sure to use 100% pure pumpkin puree, not pumpkin pie filling.
  • Dark Brown Sugar: Contributes a deep, molasses-rich sweetness and helps with moisture retention in the dough.
  • Real Vanilla Extract: A touch of vanilla complements the pumpkin and spice beautifully, adding depth to the overall flavor profile.
  • Egg Wash: A simple mix of one egg and one teaspoon of water, creating that beautiful golden-brown sheen and helping the sugar topping adhere.
  • Granulated Sugar: Forms the base of our irresistible crackly topping.
  • More Pumpkin Spice: For an extra boost of flavor in the topping.
  • Ground Cinnamon: Pairs perfectly with pumpkin spice, adding another layer of warm aroma and flavor to the crust.

Step-by-Step Guide: Crafting Your Air Fryer Pumpkin Spice Bagels

Making these delightful bagels is simpler than you might think, especially with the magic of the air fryer. Follow these clear steps to achieve perfect, golden-brown bagels every time.

First, begin by preparing your dry ingredients. Carefully measure out 1 cup plus 1 tablespoon of unbleached all-purpose flour. Add this to a medium-sized mixing bowl, along with 2-1/4 teaspoons of baking powder, 1 teaspoon of your pumpkin spice blend (preferably homemade for the best aroma!), and 1/2 teaspoon of kosher salt. The precise measurements ensure the perfect rise and flavor balance.

Dry ingredients for pumpkin spice bagels (flour, baking powder, pumpkin spice, salt) whisked together in a bowl.

Using a whisk, thoroughly combine these dry ingredients until they are uniformly mixed. This step is crucial for an even distribution of the baking powder and spices throughout the dough. Once whisked, set the bowl aside while you prepare the wet components.

Wet ingredients for pumpkin spice bagels (Greek yogurt, pumpkin puree, brown sugar, vanilla extract) in a separate bowl.

In a separate, clean bowl, measure and add your wet ingredients. This includes 2/3 cup of plain nonfat Greek yogurt, 1/3 cup of pumpkin puree (ensure it’s pure pumpkin, not pie filling), 2 tablespoons of dark brown sugar for deep sweetness, and 1/2 teaspoon of real vanilla extract for an aromatic lift.

Wet ingredients for pumpkin spice bagels stirred until thoroughly combined.

Stir these wet ingredients together thoroughly until they are completely combined and smooth. This ensures that the flavors are well-distributed before introducing them to the dry mix.

Pouring the combined wet ingredients into the bowl with the dry ingredients for the bagel dough.

Now, pour the wet mixture directly into the bowl containing your dry ingredients. It’s time to bring your bagel dough to life!

Mixing the wet and dry ingredients with a spatula to form the bagel dough.

Using a sturdy spatula, mix the ingredients until they are just combined. Avoid overmixing, as this can lead to tough bagels. The dough will appear somewhat shaggy and sticky at this stage.

Bagel dough combined into a sticky ball with a spatula.

Continue to use your spatula to gently shape the dough into a cohesive ball within the bowl. As noted, this is a naturally stickier dough due to the Greek yogurt and pumpkin puree. Don’t worry; you’ll be working with additional flour in the next step to make it manageable.

Bagel dough turned out onto a floured surface and divided into four equal portions.

Lightly dust a clean work surface with flour. Turn the dough out onto the floured surface. Using a bench scraper or a knife, divide the dough into four roughly equal portions. Each portion will become one delicious pumpkin spice bagel.

Each portion of bagel dough rolled in a little flour.

Take each individual piece of dough and roll it in a little extra flour. This helps reduce stickiness and makes the shaping process much easier. Ensure each piece is lightly coated.

One piece of bagel dough shaped into a 9 to 10-inch rope.

Now, gently roll each floured dough portion into a rope approximately 9 to 10 inches long. Aim for an even thickness along the entire length to ensure consistent cooking.

Connecting the ends of a dough rope to form a bagel shape.

Carefully connect the two ends of each dough rope to form a bagel shape. Pinch the seam firmly to secure it, ensuring the hole remains open in the center. This creates the classic bagel form.

Repeat the rolling and shaping process with the remaining three portions of dough until you have four beautifully shaped bagels, ready for their special topping.

Brushing an unbaked bagel with egg wash.

Prepare your egg wash by beating one egg with one teaspoon of water in a small bowl. Using a pastry brush, generously brush each bagel with this egg wash. This helps the topping adhere and creates a lovely golden crust.

Sprinkling pumpkin spice sugar mixture onto an egg-washed bagel.

For the irresistible pumpkin spice sugar topping, mix together 1 tablespoon of granulated sugar, 1/4 teaspoon of pumpkin spice, and 1/8 teaspoon of ground cinnamon in a small bowl. Liberally sprinkle this aromatic mixture over the egg-washed bagels. This creates that delightful crackly crust that makes these bagels so special.

These prepped bagels look incredibly promising already, ready to transform into a delicious breakfast treat in your air fryer.

Meanwhile, it’s time to preheat your air fryer! Set it to 300℉ (or 150℃). Proper preheating is key for even cooking and that desirable crispy exterior.

The Magic of Air Frying: Healthier & Faster Bagels

If you haven’t yet discovered the wonders of an air fryer, you’re in for a treat! This versatile countertop appliance has revolutionized the way we cook, allowing us to achieve deliciously crispy food with significantly less oil than traditional deep frying. Essentially, an air fryer works by circulating superheated air at high speeds around your food. This intense convection cooking method creates a crispy, golden exterior that rivals deep-fried dishes, but often in a fraction of the time and with far less fat.

There’s a wide array of air fryer makes and models available on the market, each with its own features and capacities. When my husband researched for our kitchen, he found this particular air fryer to be an excellent choice due to its performance and reliability. However, the best air fryer for you will depend on your specific needs, kitchen space, and budget. We always recommend doing your own research to find one that perfectly fits your culinary lifestyle.

How Air Frying Delivers Healthier Results

The primary health benefit of air frying stems from its minimal oil requirement. Instead of submerging food in a vat of hot oil, air frying typically requires only a thin coat of oil – sometimes just a few spritzes, or up to a tablespoon for certain recipes. When the powerful hot air comes into contact with this thin layer of oil and the food’s surface, it rapidly crisps and browns. This drastically reduces the amount of unhealthy fats and calories in your meals, without compromising on the delightful texture and flavor you crave. You get all the crispiness and satisfaction of traditionally fried food, but with a lighter, more wholesome approach.

It’s important to remember that not all air fryers are created equal. Some models automatically preheat, while others require manual preheating. Basket sizes also vary considerably, meaning you might need to adjust your cooking in batches, especially for recipes like these bagels. Always consult your air fryer’s manual for specific temperature and timing recommendations, and be prepared to experiment a little to find the sweet spot for your particular appliance. This will ensure consistently perfect results every time.

Air Frying Your Bagels to Perfection

Once your air fryer is preheated to 300℉ (150℃), carefully place two of your prepared pumpkin spice bagels into the air fryer basket. Ensure they are not overcrowded, allowing sufficient space for the hot air to circulate around each bagel. This is crucial for even cooking and that sought-after crispy exterior. Air fry the bagels for 12 minutes. Cooking times can vary slightly depending on your specific air fryer model and its wattage, so it’s always a good idea to keep an eye on them towards the end of the cooking cycle. Depending on the size of your air fryer basket, you may need to cook these in two separate batches to achieve the best results.

Just look at that magnificent pumpkin spice sugar crust! The way it caramelizes and forms a beautiful, crackly layer is pure perfection. This topping isn’t just for looks; it adds an incredible layer of sweetness and texture that makes these bagels truly stand out. Once air-fried, let them cool slightly before slicing.

Once cooled enough to handle, carefully slice your air-fried pumpkin spice bagels in half. Now they’re ready for the ultimate bagel experience: toasting and topping!

How to Toast Your Air Fryer Bagels for Extra Crispy Goodness

For the freshest and most delightful experience, toasting your freshly baked bagels is a must. The air fryer excels at this too, giving them an unparalleled crispy finish. Increase the heat of your air fryer to 360°F (180°C).

For an extra touch of indulgence, you can lightly swipe the cut sides of your bagel halves with butter. If you plan to use cream cheese, a light spray with olive oil instead of butter works beautifully, or you can simply skip this step entirely and toast them plain. Pop the two halves into your preheated air fryer, cut-side up or down (experiment to see which you prefer). Air fry for 2 to 4 minutes, or until they reach your desired level of toasty-ness and golden-brown perfection. Keep a close eye on them as air fryers can toast quickly!

You’ll find yourself reaching for another one before you’ve even finished the first.
