We like to pop ours into the air fryer (or under the broiler) to allow the cheese to melt and to get a crispy exterior. Serve with sour cream and salsa or any of your favorite toppings!

Ingredients

  • 6 large eggs
  • 1 tablespoon olive oil (butter or avocado oil)
  • 1/2 yellow onion, finely diced
  • 1 jalapeño, finely diced (seeds and ribs removed)
  • 1 to 1½ cup cooked turkey sausage crumbles (or any cooked sausage)
  • 3 green onions, sliced
  • 1 cup shredded cheese (pepper jack or spicy Colby Jack cheese recommended)
  • 12 ounces mini tater tots, baked or air-fried until crispy
  • 4 large flour tortillas (burrito size)

Instructions

  9. Air Fry: Preheat your air fryer to 360°F (180°C). Work in batches if necessary, placing burritos seam-side down in an even layer. Air fry for 6 to 10 minutes or until the tortilla is golden brown and crispy.
