  2. Place the trimmed beets on a large piece of aluminum foil and drizzle with 1½ teaspoons olive oil. Fold and crimp the edges to create a secure packet.
  3. Place the unpeeled garlic cloves on a small piece of aluminum foil and drizzle with 1/2 teaspoon olive oil. Fold and crimp the edges to create a small packet.
  4. Place both foil packages on a rimmed baking sheet and slide onto the middle rack of your preheated oven. Roast the beets for 45 to 50 minutes until fork-tender. Roast the garlic for only 25 minutes.
  5. Remove both packets from the oven and let them cool completely before handling.
  6. Once the beets are cool enough, working with one beet at a time, use a kitchen towel (it may stain) or paper towels to rub their skins off. Cut the peeled beets into quarters and place them into the bowl of your food processor, fitted with the blade attachment.
  7. Peel the skins off the roasted garlic cloves and add them to your food processor along with the lemon juice, tahini, and a pinch or two of kosher salt.
