  • 15 ounces chickpeas, drained, rinsed and thoroughly patted dry
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • teaspoons garlic herb seasoning blend

FOR THE DRESSING:

  • 1 medium clove of garlic, freshly grated
  • 3 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons warm water
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon kosher salt
  • 3 tablespoons finely grated Parmesan cheese

FOR THE SALAD:

  • 1 large bunch curly leaf kale
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 cup shaved Parmesan cheese, for serving

MAKE THE CHICKPEAS:

Place them on a silpat-lined or parchment-lined, rimmed sheet pan and toss with 1 tablespoon of olive oil and 1/2 teaspoon of kosher salt. Spread in a single layer. Place on the middle rack of your preheated oven to roast for 40 minutes, rotating the pan halfway through to ensure even roasting and crispiness. Transfer the hot roasted chickpeas to a bowl and toss immediately with 1-1/2 teaspoons of garlic herb seasoning. Set aside.

MAKE THE DRESSING:

  • Meanwhile, in a medium bowl, combine 1 grated clove of garlic, 3 tablespoons of tahini, 2 tablespoons of fresh lemon juice, 2 tablespoons of olive oil, 2 tablespoons of warm water, 2 teaspoons of Dijon mustard, 1/4 teaspoon of kosher salt, and 3 tablespoons of finely grated Parmesan cheese.
