- 8 ounces penne pasta, I use Barilla Protein+ (see notes)
- 2 cups chicken bone broth
- 1 cup marinara, homemade or store-bought
- 1/2 cup heavy cream
- 4 ounces mozzarella, shredded
- 1/4 cup torn fresh basil, plus more for serving (optional)
- 1/4 cup parmesan cheese, for serving

Instructions

In a large, deep-sided skillet, add olive oil, shallot and a pinch of kosher salt. Heat over medium-low, stirring often until soft. About 5 minutes.

Add in ground chicken, using a spatula to break up into crumbles. Cook until no longer pink and fully cooked. Then add in tomatoes, sliced garlic, italian seasoning, red pepper flakes and kosher salt. Stir and cook until the tomatoes soften and burst. About 8 to 10 minutes.

Next, add in the penne, broth, marinara and heavy cream. Stir, cover and bring to a simmer on high heat. Then uncover, reduce heat to medium-high and continue to cook until the pasta is tender, about 12 mintues.

Add in the mozzarella and fresh basil and stir until the cheese has melted.
