- After the garlic’s initial 15 minutes, transfer its pouch onto the tray with the leeks and continue roasting for 20-22 more minutes, or until the leeks are caramelized and tender.
- While potatoes cook and aromatics roast, add diced bacon to a skillet. Cook over medium-low heat until crispy, stirring occasionally. Remove crispy bacon, reserving 2 tablespoons of bacon fat in the skillet. Add chopped kale to the skillet, stir, and cook until wilted. Remove from heat.
- Transfer the caramelized leeks to a food processor. Using tongs, gently squeeze the roasted garlic cloves out of their skins into the food processor. Secure the lid and process until the leeks and garlic form a paste.
- When potatoes are tender, drain them thoroughly (keeping them in the pot). Add milk, sour cream, and butter. Mash potatoes until desired consistency, then season with 2 teaspoons of kosher salt (or to taste) and freshly ground black pepper.
- Stir in the roasted leek and garlic paste until well combined.
- Lastly, stir in the sautéed kale and crispy bacon.
- Taste the Colcannon and adjust seasoning with more salt and pepper if needed.
