  • pounds ground beef chuck, 80/20 ratio for optimal juiciness
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground preferred
  • pepper jack cheese, sliced for 10 sliders
  • 10 slider buns, or small dinner rolls

FOR THE CHIPOTLE MAYO:

  • 1 cup lemon garlic aioli, or doctored store-bought mayo (see notes)
  • 1 to 2 chipotle peppers in adobo, plus a little adobo sauce for extra flavor

Instructions 

  • Preheat your grill to 500°F (medium-high heat) for optimal searing.
  • To prepare the Chipotle Mayo: In a mini food processor, combine 1 cup of lemon garlic aioli (or doctored store-bought mayo) with 1 to 2 chipotle peppers in adobo sauce. Blend until completely smooth and creamy. Taste and adjust spice level if needed. Transfer to a bowl with a lid and refrigerate until ready to use.
