The Essential Ingredients You’ll Need for Skillet Monterey Chicken

Crafting this incredible Skillet Monterey Chicken requires a handful of readily available ingredients, each playing a crucial role in building its distinctive flavor profile and delightful textures. The simplicity of the ingredient list makes this dish accessible for any home cook, while the quality of each component ensures a truly satisfying result. Here’s what you’ll need to gather:

Ingredients for Skillet Monterey Chicken laid out on a cutting board

  • Bacon: We recommend center-cut bacon for a good balance of meat and fat, which will render into flavorful cooking oil. The crispy bits will be a fantastic topping.
  • Thin-Cut Boneless, Skinless Chicken Breast Halves: Opting for thin-cut chicken breasts ensures quick and even cooking. If your breasts are thick, you can butterfly them or pound them to about 1/2-inch thickness. This prevents dry chicken and promotes uniform doneness.
  • Kosher Salt: Essential for seasoning the chicken, enhancing its natural flavors.
  • Freshly Ground Black Pepper: A staple seasoning that adds a subtle warmth and aromatic depth to the chicken.
  • Barbecue Sauce: Choose your favorite! Whether it’s sweet, spicy, smoky, or tangy, the barbecue sauce is a star. Using a sugar-free option is also a great way to customize the dish to your dietary needs.
  • Cheddar Jack Cheese: This blend of cheddar and Monterey Jack cheese offers a perfect melt and a rich, creamy flavor. Feel free to use regular or reduced-fat versions.
  • Roma Tomato: Diced small, fresh Roma tomatoes add a burst of juicy freshness and a touch of acidity to balance the richness of the cheese and sauce.
  • Green Onions: Sliced green onions provide a mild, oniony crunch and a vibrant color as a garnish.

Step-by-Step Guide to Crafting Your Skillet Monterey Chicken

Follow these detailed steps to create a Skillet Monterey Chicken that will impress everyone at your table. Each stage is designed for maximum flavor and ease, ensuring a perfect outcome every time.

Diced bacon cooking in a skillet until crispy

Step 1: Prepare the Bacon. Begin by dicing 4 slices of bacon into small pieces. Add these to a cold, oven-safe skillet (cast iron works wonderfully here) and place it over medium heat. Starting with a cold skillet allows the bacon fat to render out slowly and evenly, resulting in perfectly crispy bacon. Cook, stirring occasionally, until the bacon is beautifully golden brown and crispy. Once done, use a slotted spoon to transfer the crispy bacon bits to a plate lined with paper towels, allowing excess grease to drain. This ensures your bacon stays crunchy. Leave about 1 tablespoon of the rendered bacon fat in the skillet – this flavorful fat will be used to cook the chicken and add an extra layer of savory depth.

Preheat your oven to 375℉ (or 190℃). This is crucial for the final baking step, ensuring the cheese melts perfectly and the flavors meld.

Thin cut chicken breast halves seasoned with salt and pepper

Step 2: Season the Chicken. While the bacon is cooling, take 4 thin-cut boneless, skinless chicken breast halves and pat them dry with paper towels. This helps achieve a better sear. Generously season both sides of each chicken breast with kosher salt and freshly ground black pepper. Don’t be shy with the seasoning; it’s key to flavorful chicken.

Chicken breasts searing in the skillet on both sides

Step 3: Sear the Chicken. Return your skillet, now with the tablespoon of bacon fat, to medium-high heat. Once the fat is shimmering, carefully add the seasoned chicken breasts to the hot skillet. If your skillet isn’t large enough to cook all four at once without crowding, work in batches. Overcrowding the pan can lower the temperature and lead to steaming rather than searing, preventing that beautiful golden crust. Cook for 6 to 8 minutes on one side until a nice sear develops, then flip and continue cooking for an additional 5 to 6 minutes, or until the chicken is fully cooked through and no longer pink in the center. The internal temperature should reach 165℉ (74℃). Once cooked, transfer the chicken to a clean platter and set aside momentarily.

Pouring barbecue sauce into the skillet to deglaze

Step 4: Deglaze with Barbecue Sauce. With the chicken removed, the skillet will have delicious browned bits (fond) stuck to the bottom. This is pure flavor! Pour in about 1/4 cup of your chosen barbecue sauce into the hot skillet. Immediately use a wooden spatula or spoon to scrape up all those browned bits from the bottom. This process, known as deglazing, incorporates all the rich, caramelized flavors into the sauce, creating a deeper, more complex base for your chicken.

Adding cooked chicken breasts back into the skillet with barbecue sauce

Step 5: Return Chicken to Skillet & Coat. Place the cooked chicken breasts back into the skillet, nestling them into the barbecue sauce. Ensure each piece is partially coated by gently spooning the sauce over them or turning them briefly.

Coating chicken breasts in barbecue sauce in the skillet

Step 6: Add More Barbecue Sauce. Drizzle the remaining 1/4 to 1/2 cup (or even more, to your preference!) of barbecue sauce over the chicken breasts. Make sure they are well-coated, as this sauce will caramelize slightly in the oven and impart incredible flavor.

Topping chicken breasts with cheddar jack cheese in the skillet

Step 7: Top with Cheese and Bake. Evenly distribute 1/4 cup of cheddar jack cheese over each chicken breast. Ensure the cheese covers the chicken well for maximum melty goodness. Carefully transfer the oven-safe skillet into your preheated oven.

Step 8: Melt the Cheese. Bake for 6 to 8 minutes, or until the cheddar jack cheese is thoroughly melted, bubbly, and slightly golden. Keep a close eye on it to prevent over-browning. The goal is perfectly melted, gooey cheese that clings to the chicken.

Step 9: Garnish and Serve. Once the cheese is beautifully melted, carefully remove the skillet from the oven. For the final flourish, generously scatter the reserved crispy chopped bacon, fresh diced Roma tomatoes, and sliced green onions over the top of the Skillet Monterey Chicken. These fresh toppings add a delightful contrast in texture and a burst of vibrant flavor.

Tips for the Perfect Skillet Monterey Chicken

  • Don’t Overcrowd the Skillet: When searing chicken, ensure there’s enough space between each piece. Crowding the pan lowers the temperature and can lead to steamed, rather than seared, chicken. Work in batches if necessary.
  • Use an Oven-Safe Skillet: A cast-iron skillet or another oven-safe pan is essential for seamless transfer from stovetop to oven.
  • Quality Barbecue Sauce: The flavor of your BBQ sauce will significantly impact the dish. Use your favorite, or experiment with different types to find your perfect match.
  • Thin Chicken Breasts for Even Cooking: Thin-cut chicken cooks quickly and evenly, preventing dry spots. If your chicken breasts are thick, slice them horizontally to create thinner cutlets or pound them gently between two sheets of plastic wrap.
  • Watch the Cheese: Keep an eye on the skillet in the oven to prevent the cheese from over-browning. You want it bubbly and melted, not burnt.
  • Fresh Toppings are Key: The diced tomatoes and green onions add a crucial element of freshness and a delightful textural contrast to the rich, cheesy chicken. Don’t skip them!

Serving Suggestions to Elevate Your Meal

While the Skillet Monterey Chicken is undeniably the star of the show, pairing it with the right side dishes can transform your meal into a truly memorable dining experience. Here are some fantastic suggestions:

  • Roasted Potatoes: As mentioned, crispy oven-roasted potatoes are a classic and delicious accompaniment, soaking up any extra sauce.
  • Side Salad: A simple green salad with a light vinaigrette provides a refreshing contrast to the rich flavors of the chicken.
  • Cilantro Lime Rice: A vibrant, zesty rice side can complement the Tex-Mex inspired flavors beautifully.
  • Steamed Vegetables: Broccoli, green beans, or asparagus offer a healthy, crisp counterpoint.
  • Cornbread: Sweet or savory cornbread makes a wonderful addition, perfect for soaking up every last bit of delicious sauce.
  • Coleslaw: A creamy, tangy coleslaw can provide a cool, crunchy texture that balances the warm, savory chicken.

Storing and Reheating Leftovers

Got leftovers? You’re in for another treat! Skillet Monterey Chicken reheats surprisingly well, making it a fantastic meal prep option. Store any cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, you can either warm individual portions in the microwave until heated through, or for best results, reheat in an oven at 300°F (150°C) until warm, loosely covered with foil to prevent drying out. You can even add a sprinkle of fresh cheese before reheating in the oven for an extra melty boost!
