Chargrilled Steak and Grape Medley

Grilled Steak Salad with Blue Cheese and Sweet Grilled Grapes: A Recipe for Culinary Bliss

This isn’t just a salad; it’s a revelation. A symphony of savory grilled steak, tangy blue cheese, and surprisingly sweet, smoky grilled grapes, this dish has the power to transform your day. Forget your troubles, because this vibrant, satisfying salad is about to become your new favorite mood-changer.

The Week That Called for Culinary Intervention

We all have those weeks, don’t we? The ones where minor mishaps snowball into an epic comedy of errors, leaving you yearning for comfort and a touch of magic. Mine started innocently enough, with a cart full of groceries and a rogue container of blueberries. They decided to stage a dramatic escape, leaving a blue trail across the supermarket floor, right up to the self-checkout. The pitying glances from fellow shoppers, barely concealing their amusement, were just the beginning.

Back home, thinking I’d escaped the blueberry fiasco, I set my new, secure container down, only for it to erupt in a cascade of tiny blue spheres across my kitchen. I wanted to scream. But the universe wasn’t done with me. The weekend brought a series of unfortunate events: a painful collision with an open cupboard door, a searing encounter with a hot oven rack, and the ultimate domestic tragedy—a brand-new spoon, plunging straight down the garbage disposal while it was, of course, running. No bounce, no clang, just a silent, irreversible swoosh into the metallic abyss. At that point, I confess, I may have shed a tear or two. Okay, I totally lost it.

That’s when I knew. This week demanded a special kind of intervention, a culinary escape from the chaos. I retreated to my kitchen, a sanctuary for transforming simple ingredients into something extraordinary. My solace? A generously portioned grilled steak salad, paired with a glass (or three) of wine. The transformation was immediate. It wasn’t just a meal; it was a reset, a reminder that even the most trying days can end with a moment of delicious joy.

Crafting the Ultimate Grilled Steak Salad

This recipe isn’t just about ingredients; it’s about the art of combining unexpected flavors and textures to create a truly memorable experience. From the succulent, perfectly grilled steak to the burst of sweetness from charred grapes and the creamy tang of blue cheese, every element plays a crucial role.

Choosing and Preparing Your Steak

For a truly exceptional steak salad, start with quality meat. I recommend about two pounds of your favorite cut – ribeye is a fantastic choice for its rich marbling and robust flavor, perfect for grilling. It’s also a good idea to grill an extra steak or two; leftovers make for a quick and satisfying lunch the next day. Ensure your steak is at room temperature before grilling for even cooking. This usually means taking it out of the fridge at least 30 minutes prior to cooking.

The Dual-Purpose Marinade & Dressing: A “Dressinade” Masterpiece

One of the stars of this recipe is its ingenious marinade, which doubles as a vibrant salad dressing. I affectionately call it a “dressinade” – a truly versatile concoction that infuses your steak with incredible flavor while also providing a zesty complement to your greens.

Let’s gather our marinade ingredients. You’ll need a glass jar or any container with a tight-fitting lid for easy mixing.

  • Garlic: Four large cloves, pressed or finely minced, form the aromatic heart of our dressing. Fresh garlic provides an unparalleled depth of flavor.
  • Steak Seasoning: A good seasoning blend is key. I swear by Simply Organic Chophouse seasoning, known for its superb blend of garlic, black pepper, dill seed, coriander, and chili peppers. If you opt for a different blend, start with half the amount and taste-test, adjusting to your preference.
  • Dijon Mustard: Two tablespoons of Dijon mustard, whether creamy or grainy, will lend a silky creaminess and a delightful piquant kick to the dressing, helping to emulsify the ingredients beautifully.

  • Worcestershire Sauce: Two and a half tablespoons of Worcestershire sauce provide a savory, umami depth that is indispensable for steak marinades.
  • Red Wine Vinegar: A quarter cup of red wine vinegar delivers that essential tangy bite. I once splurged on a fancy cabernet red wine vinegar, only to discover it didn’t quite live up to its six-dollar-and-seventeen-cent price tag in terms of distinct cabernet flavor. Lesson learned, but any good quality red wine vinegar will make this “dressinade” shine.

  • Fresh Lemon Juice: About a tablespoon of freshly squeezed lemon juice brightens all the flavors, adding a fresh, zesty note.
  • Tamari (or Soy Sauce): A quarter cup of Tamari (or a low-sodium, gluten-free soy sauce) adds another layer of salty, savory richness.
  • Grapeseed Oil (or Light Olive Oil): Finally, half a cup of grapeseed oil or extra light olive oil. These oils have a higher smoke point, which is crucial for grilling, helping to prevent flare-ups and ensuring your steaks cook beautifully without burning the marinade.

Once all ingredients are in the jar, secure the lid tightly. Now, shake vigorously until the mixture is thick and thoroughly blended. This ensures all the flavors meld into a harmonious “dressinade.”

Pour half of this incredible mixture over your prepared steaks in a bowl or baking dish. Use tongs to toss and coat the meat evenly. Let the steaks marinate at room temperature for at least 30 minutes. This not only allows the flavors to penetrate but also helps the steak come to room temperature, ensuring a more even cook. Set the remaining “dressinade” aside – it’s for your salad!

Grilling the Steak to Perfection

Preheat your grill to a robust 400 degrees Fahrenheit (200°C). Once hot, carefully place the marinated steaks on the grates. Grill for approximately 6-8 minutes per side, or until they reach your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C). Keep an eye out for those beautiful grill marks – a sign of a perfectly seared exterior! Once cooked, transfer the steaks to a cutting board, cover them loosely with foil, and allow them to rest for 5-10 minutes. This resting period is crucial; it allows the juices to redistribute, ensuring a tender and flavorful bite every time.

The Unexpected Delight: Grilled Grapes

While your steaks are resting, it’s time to introduce the secret ingredient that elevates this salad from good to extraordinary: grilled grapes. Rinse a large bunch of seedless red grapes thoroughly.

Place a grill basket onto the hot grill grates. Once the basket is smoking hot, carefully spread the grapes inside. Grill them for about 5-8 minutes, or until they become beautifully plump, start to caramelize, and some begin to burst. This process softens them, intensifies their sweetness, and adds a delicate smoky char that is simply divine. Trust me, bursting, charred grapes are a “gra-zillion” times better than plain ones! Use tongs to carefully remove them to a clean bowl, collecting any sweet stragglers.

Assembling Your Masterpiece Salad

Now for the grand finale: assembling your magnificent grilled steak salad.

  • Greens: In a large bowl, combine your choice of dark leafy greens. A mix of spinach, baby kale, and other robust greens works beautifully, providing a sturdy base that stands up to the rich steak and bold dressing. These greens offer a slight bitterness that perfectly balances the sweet grapes and savory steak.
  • Shallots: Thinly slice a medium shallot. Its mild, oniony flavor adds a delicate bite without overpowering the other ingredients. Add the sliced shallots to your bowl of greens.

  • Blue Cheese: Crumble about 2-3 ounces of your favorite blue cheese. Its sharp, creamy, and pungent notes are the ideal counterpoint to the sweet grilled grapes and rich steak. Add it to the bowl with the greens and shallots, then give everything a gentle toss to combine.

Divide the tossed salad base among four plates. Slice your rested steak into thin, tender strips and arrange them artfully over the greens. Generously scatter the warm, grilled grapes over the steak. Finally, drizzle a few spoonfuls of the reserved “dressinade” over each serving. For an added layer of texture and a satisfying crunch, sprinkle on a tablespoon or so of dry-roasted sunflower seeds or pepitas.

The Perfect Bite

Welcome to a world of flavor! This Grilled Steak Salad with Grapes truly is a game-changer. It was my official first grilling post of the season, and it definitely delivered. The sweet, slightly charred grapes, the pungent blue cheese, and the savory grilled steak came together to flip the switch on my utterly terrible week. The combination is simply irresistible. Every forkful offers a medley of textures and tastes – the tender steak, the juicy burst of a grilled grape, the crisp greens, and the creamy, sharp blue cheese, all brought together by the tangy, savory dressing. It’s a perfect harmony that will have you coming back for more.

Seriously, try it. You’re going to love this grilled steak salad with grapes. It’s an unexpectedly sophisticated dish that’s surprisingly easy to make and guaranteed to impress.

Grilled Steak Salad with Blue Cheese + Grilled Grapes

Grilled Steak Salad with Blue Cheese + Grilled Grapes

My favorite things in life; steak, salad, grilled grapes and blue cheese all on one plate.

Yield: 6 servings

Prep Time: 35 mins

Cook Time: 15 mins

Total Time: 50 mins

Ingredients

  • 4 cloves garlic, grated or finely minced
  • 1 tablespoon steak seasoning (Use McCormicks or Simply Organic Chophouse Seasoning)
  • 1/4 cup low-sodium tamari
  • 3 tablespoons red wine vinegar
  • 2½ tablespoons Worcestershire Sauce
  • 2 tablespoons dijon mustard
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/2 cup grapeseed oil
  • 2 pounds steak (I use ribeye)
  • 2 bunches seedless red grapes
  • 10 ounces salad greens
  • 1 medium shallot, sliced thin
  • 2 ounces crumbled blue cheese
  • 1/3 cup roasted sunflower seeds or pepitas

Instructions

  1. Add the garlic, steak seasoning, tamari, red wine vinegar, Worcestershire, Dijon, lemon juice, and grapeseed oil into a glass jar or container with a tight-fitting lid. Shake to combine until thick and blended.
  2. Place 2-3 (about 2 pounds) ribeye steaks in a bowl or baking dish and pour half of the dressing/marinade over top. Use tongs to toss and coat the steak in the dressing. Let the steaks marinate at room temperature for at least 30 minutes.
  3. Heat a grill to 400 degrees Fahrenheit (200°C). Place the steaks on the grill and cook for 6-8 minutes per side depending on desired doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C). Place the grilled steaks on a cutting board, cover loosely with foil, and let rest for 5-10 minutes.
  4. Meanwhile, place a grill basket on hot grill grates. Once hot, lay down the bunch of red grapes and grill for 5-8 minutes until they start to caramelize, plump, and burst. Remove to a bowl.
  5. In a large bowl, toss together the leafy greens, sliced shallots, and blue cheese. Divide among individual plates. Slice the rested steak into thin strips and serve on top of the salad. Drizzle with a couple of spoonfuls of the remaining dressing and a sprinkle of dry-roasted sunflower seeds for crunch.

Notes

For an extra burst of flavor and texture, try crisping your shallots in a little olive oil and butter until golden and crispy before adding them to the salad!
