Home Kitchen Blueberry Lemon White Wine Spritzer

Your weekend needs these Blueberry Lemonade Spritzers!

Fresh blueberry puree that’s infused with lemon and combined with a wine simple syrup is poured over ice and topped with sparkling water for a refreshing summer beverage! If you haven’t made wine simple syrup for spritzers before, this is your sign to do so. It adds a little sweetness and a subtle wine flavor – which is reliable for those who like only a little wine but don’t want the hangover the next day.

In my opinion, it’s the reliable summer drink.

For this Blueberry Lemon Wine Spritzer Set out:

  • white wine simple syrup – More on this below.
  • blueberries – Adds sweetness with a slightly floral flavor.
  • lemon peel and lemon juice – Lends bright citrus flavor.
  • sparkling water – I like to use Topo Chico (not sponsored).

Make The White Wine Simple Syrup:

In a saucepan, measure and add 1 cup white wine (I use sauvignon blanc) and 1/4 cup sugar. Heat over medium, stirring until the sugar dissolves. Remove and let cool before pouring into a jar or container with a tight fitting lid. Refrigerate until ready to use. Clearly, this isn’t an overly sweet (or boozy) drink.

Make The Blueberry Lemon Mixture:

In a sauce pan, measure and add 2 cups fresh blueberries and the zest from a large lemon.

Pour in 1 cup freshly squeezed lemon juice.

Bring to a low boil over medium to medium-high heat, stirring occasionally, for 6 to 8 minutes.

Remove and let cool. I like to speed this process up by adding ice and cold water to a large bowl (about 1/3 to 1/2 way depending) and setting the pan inside.

Once cooled, remove all of the lemon rinds and discard.

Transfer the cooled lemon blueberry mixture to a blender and puree until smooth. Never puree hot liquids!

Place a mesh strainer on top of a large liquid measuring cup and strain the blueberry lemon mixture.

Once strained, pour it into a pitcher.

Pour in all of the white wine syrup.

Stir to combine.

Fill cups the top with ice.

Fill the glass halfway with the blueberry wine mixture.

Top off with sparkling water.

Garnish with sprigs of fresh mint and lemon wheels.

Deeply good and light and refreshing! Summer in a glass!

Sip, enjoy…

And repeat.

Enjoy! And if you give this Blueberry Lemonade Spritzers recipe a try, let me know! Snap a photo and tag me on twitter or instagram!
