Chill Your Bowl

Place a large mixing bowl in the freezer for about 30 minutes while you prepare the rest of the ingredients. A chilled bowl helps the cream whip faster and reach a better texture.

Make the Ice Cream Base

Set 4 ounces bittersweet chocolate (chopped) in a heatproof bowl that will sit over a saucepan. Add about an inch of water to the pan and bring to a gentle simmer. Place the bowl on top of the pan, making sure the water does not touch the bowl bottom. Stir occasionally until the chocolate is fully melted, then remove the bowl and set it on a trivet to cool slightly.

To the melted chocolate, stir in 1 (14-ounce) can sweetened condensed milk, 3 tablespoons unsweetened dutch-process cocoa, 3 tablespoons dark cocoa, 1/4 teaspoon fine salt and 1 teaspoon vanilla extract. Mix until smooth and well combined, then set the chocolate mixture aside to cool slightly.

What Is Dutch-Process Cocoa?

Dutch-process cocoa has been treated with an alkalizing agent to reduce natural acidity, resulting in a milder, less bitter cocoa with a richer color.

Whip the Cream

Remove the chilled bowl and pour in 2 cups heavy whipping cream. Use a hand mixer or stand mixer with a whisk attachment, starting at medium speed. As the cream thickens, increase the speed and beat until stiff peaks form—be careful not to overwhip.

Fold Together

Gently fold the whipped cream into the chocolate-condensed milk mixture using a large spatula and wide, sweeping motions. Fold patiently and carefully until no visible streaks remain. This keeps the mixture airy and yields a smooth texture in the finished ice cream.

Transfer the combined base to a freezer-safe container and smooth the top. Cover tightly with a lid or foil and freeze for at least 8 hours or overnight until firm.

Serve

Remove the ice cream from the freezer 20–30 minutes before serving to allow it to soften slightly for easier scooping. Rinse an ice cream scoop under hot water between scoops to create smooth, attractive balls. Top as desired with toasted almonds, mini chocolate chips, marshmallows, sprinkles or your preferred garnish.

Instructions

  4. Remove the chilled bowl and pour in the heavy cream. Whip on medium speed, increasing speed as it thickens, until stiff peaks form.
  5. Gently fold the whipped cream into the chocolate mixture with large sweeping motions until no streaks remain.
  6. Transfer the base to a freezer-safe container, smooth the surface, cover tightly and freeze for at least 8 hours or overnight.
  7. Before serving, let the ice cream sit at room temperature for 20–30 minutes for easier scooping. Warm the scoop under hot water between portions if desired.
