Ingredients

FOR THE GRILLED CHICKEN:

FOR THE PIZZAS:

  • 4 naan, homemade or store bought
  • olive oil
  • 1 cup mozzarella cheese, freshly grated (be generous)
  • 1/4 cup grated Parmesan cheese
  • 2 medium romaine lettuce, sliced
  • caesar dressing, for serving
  • parmesan cheese shavings or grated, for serving
  • black pepper, for serving

Instructions 

  • Preheat your grill to 400℉ (or 200℃).
  • Toss the chicken with a few tablespoons of caesar dressing and sprinkle both sides of each breast with lemon pepper.
  • Place the chicken breasts onto the hot grill grates and grill for 6 minutes on the first side. Turn and continue to grill for 4 to 5 more minutes or until the chicken is fully cooked and no longer pink. Transfer to a cutting board, cover with foil and let rest for 5 minutes before slicing.
  • Meanwhile, reduce the heat of your grill to 350℉ (or 180℃).
  • Brush both sides of the naan with olive oil. Grill for 1 to 2 minutes, turn and top each with 1/4 cup of mozzarella and sprinkle with a tablespoon of Parmesan. Close the lid for 1 minute or until cheese is melted.
