The moment my copy of Hayley’s cookbook arrived, it was instantly snatched up by my daughter, Haileigh (who is now 15 – time truly flies!). She immediately began flipping through it, meticulously marking every single recipe she deemed “we” needed to make with a flurry of sticky notes. Of course, when she says “we,” she really means me. But honestly, I don’t mind a bit, especially if it means I can delegate dish duty to her! It’s a small price to pay for the inspiration her enthusiasm brings to our kitchen.

After a friendly wrestling match to pry the book from her kung-fu grip (any guesses on the movie reference?), I easily identified a dozen or so recipes that instantly caught my eye. “Margarita Pie”? Absolutely, count me in. “Red Velvet Truffle Brownie Bombs”? I’m totally down for that indulgent experience. However, my gaze ultimately lasered in on these particular “Joyful Almond Macaroons” (and let’s be clear, we’re talking macaroons, not the delicate French macarons!). Why these? For a few undeniable reasons:

  1. I possess an eternal and unwavering love for all things coconut. The tropical aroma and unique texture are simply irresistible to me.

However, if you’re using a brand like Bob’s Red Mill, which often features larger coconut pieces, you might find that a slightly reduced amount, around 4-1/2 cups, works perfectly to maintain the ideal consistency and flavor balance. Next, introduce the star liquid ingredients: sweetened condensed milk, almond extract, and vanilla extract. These ingredients are what give the macaroons their signature sweetness, moisture, and delightful aroma.

Once all your ingredients are in the bowl, give them a good stir until everything is thoroughly combined and sticky. I must admit, both my girls and I couldn’t resist sampling this amazing coconut concoction right from the bowl. Spoiler alert: it was amazeballs!

Now comes the fun part: shaping your macaroons. Drop rounded tablespoons of the coconut mixture onto your prepared baking sheets, leaving about an inch of space between each mound. For perfectly shaped cookies and to prevent the delicate coconut shreds from burning during baking, Hayley shares a brilliant tip: lightly wet your fingers with a little water and gently smooth out the tops of the coconut mounds. This simple trick makes a significant difference in the final appearance and texture of your macaroons. Finish each one by pressing a whole almond firmly into the center of each cookie mound, adding that delightful crunch and classic “Almond Joy” appeal.

Once shaped, bake your macaroons for approximately 12 to 15 minutes. Baking times can vary slightly depending on your oven, but mine were perfectly golden in just 12 minutes. For those macaroons that, like my oversight, missed their almond centerpiece, simply brush a little melted chocolate on top and gently press an almond into place. Snip a tiny corner to create a small hole, then drizzle delicate ribbons of chocolate artfully over the tops of your macaroons.   • 2/3 cup all-purpose flour
  • 14 ounces canned sweetened condensed milk
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 4 to 5 pieces almond bark (or candi-quick)
  • 24 whole almonds

Instructions

  1. Preheat your oven to 350℉ (180℃).
  2. Line two baking sheets with parchment paper or a silicone baking mat.
  3. In a large bowl, toss together the coconut and flour until the coconut is lightly coated. Stir in the vanilla extract, almond extract, and sweetened condensed milk until the mixture is fully combined and sticky, which takes about 1 minute.
  4. Drop rounded tablespoons of the coconut mixture onto the prepared baking sheets, spacing them about 1 inch apart. Lightly wet your fingers with water and gently smooth out the tops of the coconut mounds. This helps prevent the coconut shreds from burning and ensures a neater appearance. Place one almond on top of each cookie mound, pressing it gently into the center.
  5. Bake for approximately 12 to 15 minutes, rotating the pans halfway through baking time, until the macaroons are golden brown around the edges and wonderfully fragrant. Allow them to cool completely on the baking sheets before proceeding.
  6. Melt the chocolate bark according to the package directions until it is smooth and melted. Dip the bottoms of the completely cooled cookies into the melted chocolate, then place them back onto the cookie sheet.
  7. For an extra flourish, pour any remaining melted chocolate into a resealable bag. Snip a tiny corner off the bag to create a small hole, and then drizzle elegant ribbons of chocolate over the tops of the dipped macaroons. Let the chocolate set completely before serving.
