- 1 to 2 teaspoons olive oil
- 1/2 a medium red onion, thinly sliced vertically
- 8 ounces pancetta, diced into ¼ to ½ inch cubes
- 1 teaspoon Dijon mustard (country Dijon recommended)
- 3 tablespoons red wine vinegar (pomegranate infused or regular)
- Salt and black pepper, to taste
- 6 hard-boiled eggs, peeled and quartered
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, combine the softened butter and crumbled bleu cheese with a fork, mixing until well combined. Slice the baguette on a slight angle into 12 slices, brush one side with olive oil, and place on a rimmed baking sheet. Toast in the preheated oven for 5 minutes. Remove and allow to cool slightly before spreading each slice generously with the bleu cheese butter. Set aside.
- Thoroughly wash the kale leaves, then strip the leaves off their tough stems and chop them into bite-sized pieces. Discard the stems.
- Place the chopped kale in a large salad bowl. Drizzle with 1 teaspoon of fresh lemon juice and 1 to 2 teaspoons of olive oil. Using clean hands, massage the lemon juice and olive oil into the kale leaves for about 1-2 minutes until they soften slightly and become more vibrant.
- Add the vertically sliced red onion to the bowl with the kale and toss gently to combine.
- Adjust an oven rack to its highest position and switch on the broiler, preparing it for the toasts.
- Place the diced pancetta into a cold skillet. Heat the skillet over medium-low heat, cooking the pancetta slowly until it is crispy and golden brown. This process allows the fat to render out effectively. Transfer the crispy pancetta to a paper towel-lined plate to drain, and set aside.
- Carefully drain off most of the rendered pancetta fat from the skillet into a heat-safe bowl, leaving approximately 3 tablespoons of fat in the skillet. Add 1 teaspoon of Dijon mustard and 1 teaspoon of sugar to the hot fat in the skillet. Whisk well. Gradually pour in the 3 tablespoons of red wine vinegar while continuing to whisk vigorously. Be cautious of the strong fumes. Season the warm dressing with a pinch of salt and ¼ teaspoon of black pepper.
- Immediately pour the hot pancetta vinaigrette over the kale and red onions in the salad bowl. Toss thoroughly until all the kale leaves are evenly coated with the dressing.
