The key here is patience and a medium-low heat. Slow cooking ensures that the garlic gently toasts to a beautiful golden brown, releasing all its incredible flavor without any bitterness or burning. These little nuggets of flavor are distributed generously across the pizza, ensuring that every bite carries that exquisite, nutty garlic essence.

Generously spread your NO-mato (tomato-less) roasted vegetable pizza sauce all over the prepared crust. This unique sauce forms the delicious, savory base for our pizza.

Evenly distribute the wilted Swiss chard leaves across the sauce. Their bright green color will add visual appeal and a fresh flavor.

Toasted Garlic + Swiss Chard Pizza

Ingredients

  • Olive oil
  • 6 large cloves of fresh garlic, peeled and sliced
  • 1 bunch Swiss chard
  • Kosher salt
  • 1 recipe Whole Wheat Pizza Dough
  • 1/2 to 3/4 cup Roasted Vegetable Pizza Sauce (no-mato sauce)
  • 1 medium red onion, sliced
  • 6 ounces Gruyère, grated
  • Cracked black pepper, for serving
  • Red pepper flakes, for serving

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Trim off the stems of the Swiss chard and chop them into 1/2 inch pieces. Place them into a bowl. Roughly chop the chard leaves and place them in a separate bowl.
  3. Pour a couple of teaspoons of olive oil into a deep-sided, 10-inch pan and heat over medium-low. Add in sliced garlic and cook slowly, stirring occasionally, until golden and toasty, about 5-8 minutes. Be careful not to burn the garlic.
  4. Add the chopped chard stems to the pan and cook until tender, about 8-10 minutes. Remove and transfer the stems along with the toasted garlic to a bowl. Add more oil to the pan if needed, then add the Swiss chard leaves. Toss to coat the leaves in the oil. Cover and cook, tossing occasionally, until wilted and tender (about 5-8 minutes). Remove the pan off of the heat to cool for a minute.
  5. Press the pizza dough to fit a traditional round pizza pan. Spread the roasted vegetable sauce out evenly over the crust.
  6. Top with the sautéed chard leaves, followed by the chard stems and all the toasted garlic. Evenly distribute the sliced red onion.
  7. Generously sprinkle all of the grated Gruyère cheese over the toppings. Brush the crust edge with olive oil.
  8. Bake the pizza in your preheated oven for 18-20 minutes, or until the crust is golden and the cheese is bubbly and melted.
  9. Allow the pizza to cool for 5 minutes before slicing. Sprinkle with cracked black pepper and red chili flakes if desired, then serve immediately.
