The Inspiration Behind the Simply Scratch Journey

For those who have explored my “About Me” page, you’re already familiar with how this culinary blog adventure began. It stemmed from a deep-seated passion for food, a commitment to cooking wholesome meals from scratch, and, perhaps most pivotally, my discovery of Ree Drummond’s incredible website, The Pioneer Woman. Her blog was a revelation, illuminating the path for me to transform my cooking photos into shareable content on a dedicated website. It was a liberating realization to know I wasn’t alone in documenting my kitchen exploits – a quirky habit I once thought was uniquely mine!

What many of you might not know is that a truly memorable experience unfolded just a year ago when I had the distinct honor of meeting Ree in person at the BlogHer Food conference in Austin. Initially, I was a whirlwind of nerves, feeling a tiny bit overwhelmed at the prospect of meeting such a massive personality in the food blogging and Food Network world. However, the moment she greeted me with a warm hug and we began conversing, all that nervousness melted away. It was as if I was simply chatting with an old friend, rather than a culinary icon. Opportunities like this – to genuinely connect with and express gratitude to the person who ignited your passion – are rare and incredibly special. I cherished every second of it, and it remains one of my most treasured memories.

Fresh ingredients laid out for making Chipotle Chicken Chili

Crafting the Perfect Chipotle Chicken Chili: Essential Ingredients

This heartwarming chicken chili recipe relies on a carefully selected blend of fresh and pantry staples to achieve its signature smoky and spicy profile. Here’s what you’ll need to gather:

  • High-quality olive oil for sautéing
  • One large yellow onion, finely diced
  • Several cloves of fresh garlic, minced
  • Boneless, skinless chicken breasts, diced into bite-sized pieces
  • A bottle of Mexican beer (or your favorite light lager) to add depth
  • A can of diced tomatoes (or tomato sauce if preferred)
  • Chipotles in adobo sauce, minced, for that irresistible smoky heat
  • Cans of black beans, pinto beans, and kidney beans, rinsed and drained
  • Rich chili powder and earthy cumin for classic chili flavor
  • Kosher salt to enhance all the flavors
  • Masa harina (corn flour) for thickening the chili to perfection
  • The juice of one fresh lime for a bright, zesty finish

I distinctly remember the day Ree’s cookbook arrived. My daughter and I were en route to the grocery store when it landed in our mailbox. With her eager assistance, we tore open the package in the car and excitedly flipped through the pages to select our first recipe. Our shared love for food, especially chili and anything with chipotle, made the choice obvious: Ree’s Chipotle Chicken Chili was the unanimous winner.

Step-by-Step Guide to Making Your Chipotle Chicken Chili

Follow these simple steps to create a hearty and flavorful chili that will become a family favorite:

First, begin by properly preparing your beans. Drain and thoroughly rinse all three cans of black, pinto, and kidney beans under cold water. This helps remove excess sodium and improves their texture.

Once rinsed, simply set the beans aside for a moment while you prepare the other ingredients. This ensures they are ready to go when it’s time to add them to the pot.

Heat a large Dutch oven or a heavy-bottomed pot over medium-high heat. Add approximately 2 tablespoons of good quality olive oil. Allow the oil to heat up sufficiently until it shimmers, indicating it’s ready for sautéing.

Carefully add the diced yellow onion to the hot oil. Stir them occasionally to ensure even cooking.

Once the onions have softened slightly, incorporate the minced garlic. The aroma will quickly fill your kitchen, a sure sign that the flavor base is building beautifully.

Continue cooking the onion and garlic mixture for a few minutes until the onions become soft, translucent, and just begin to take on a beautiful golden hue. This step is crucial for developing a sweet, aromatic foundation for your chili.

Add the diced boneless, skinless chicken breasts to the pot, spreading them out evenly across the bottom. This allows the chicken to make good contact with the hot surface for optimal browning.

Allow the chicken to cook undisturbed for several minutes until it starts to turn a light golden color before stirring. This browning step adds another layer of savory flavor to the chili.

Pour in three-quarters of a bottle of beer. Ree’s original recipe suggests a Mexican beer, but any light lager or a local craft brew will work wonderfully. I opted for a Shiner Bock from Texas, which felt like a perfectly acceptable, regionally appropriate substitute!

A small confession: during our hurried grocery trip, while adding items to an already lengthy list, I completely forgot the diced tomatoes. Fortunately, I had tomato sauce at home, and the chili still turned out incredibly delicious. However, for the authentic experience, add one 14-ounce can of diced tomatoes, or a can of tomato sauce if you find yourself in a similar predicament.

Next, carefully add the minced chipotles in adobo sauce. These are the stars that bring the wonderful smokiness and a gentle kick to the chili.

Now, it’s time to add the drained and rinsed black, pinto, and kidney beans, introducing a medley of textures and flavors.

Give all the ingredients a good stir to thoroughly combine them. Ensure everything is well incorporated for an even distribution of flavors.

Measure in 1 tablespoon each of chili powder and cumin. These spices are fundamental to the classic chili flavor profile, adding warmth and depth.

Season the chili with 2 teaspoons of kosher salt. Adjust to your taste preferences, but this amount typically provides a balanced flavor without being overly salty.

The Simmer for Flavor Development

Give the chili another thorough stir, bringing it to a rolling boil. Once it reaches a boil, reduce the heat to a low simmer, cover the pot with a lid, and allow it to cook gently for 45 minutes to an hour. This extended simmering time is crucial for the flavors to meld and deepen beautifully.

After the chili has simmered and the chicken is tender, it’s time for a secret ingredient that enhances the texture. In a separate bowl, combine the remaining beer (from the bottle you started earlier) with the 1/4 cup of masa harina.

Whisk this mixture with a fork until it forms a smooth, lump-free paste. Masa harina, or corn flour, is a fantastic natural thickener for chili, adding a subtle corn flavor that complements the other ingredients beautifully.

Pour the masa harina and beer mixture into the simmering chili. Stir well to incorporate it, and you’ll notice the chili beginning to thicken to a rich, satisfying consistency. Allow it to simmer for another 10 minutes to fully activate the thickening properties.

Finally, squeeze in the fresh juice of one medium lime. The bright, acidic notes of the lime will cut through the richness of the chili, adding a vibrant finish and awakening all the flavors.

Serve and Savor!

Once everything is perfectly combined and thickened, your smoky chipotle chicken chili is ready to be served!

This chili is absolutely best served in generous, deep bowls, piled high with a dollop of cool sour cream, a mound of sharp shredded cheddar, and a sprinkle of fresh cilantro. For those who crave extra heat, consider adding a few lime wedges, some sliced avocado for creaminess, or an extra drizzle of your favorite hot sauce. My family truly loved this delicious twist, preferring the lean chicken over traditional ground beef. I especially appreciated how distinctly I could taste the beautiful smokiness from the chipotles, the subtle sweetness and brightness from the lime juice, and that faint, underlying hint of beer flavor, which I suspect was perfectly imparted by my choice of Texas brew. It’s a wonderfully balanced and deeply satisfying meal.

Meal Prep Made Easy: How to Freeze and Reheat Chili

This chipotle chicken chili is not only delicious fresh but also freezes exceptionally well, making it perfect for meal prepping. Follow these tips to ensure your chili stays fresh and flavorful for future meals:

  • Cool Completely: Before attempting to freeze, ensure your chili is absolutely and completely cool. Placing hot or even very warm food directly into the freezer (or fridge) can drastically raise the internal temperature of your freezer, potentially thawing other nearby items and negatively affecting their quality.
  • Portion Smartly: Once thoroughly cooled, divide the chili into convenient portions. Whether you prefer single servings, or enough for two or four people, transfer the cooled chili into freezer-safe bags or air-tight containers. I highly recommend using freezer-safe bags and pressing out as much air as possible before sealing; this helps prevent freezer burn and optimizes storage space.
  • Flatten for Efficiency: For freezer bags, once portioned, lay them flat on a rimmed baking sheet. Freeze them in this flat position for a few hours. This method, similar to freezing homemade marinara, allows for easy stacking and significantly saves freezer space.
  • Store Effectively: Once frozen flat, you can then stack these chili portions vertically or horizontally, maximizing every inch of your freezer. Properly stored chili can remain in the freezer for up to 6 months, ensuring you always have a delicious, homemade meal ready.
  • Reheat Safely: My preferred method for reheating frozen chili is to transfer it to the refrigerator overnight to thaw gradually. If you need a quicker option, you can soak the sealed bag or container in a sink filled with lukewarm water for 20 to 30 minutes, flipping it occasionally and changing the water once or twice. Alternatively, you can defrost it in the microwave until thawed. Once thawed, transfer the chili to a saucepan or Dutch oven and heat it gently over medium-low heat, stirring frequently, until it’s thoroughly heated through and simmering.
