- 2 ounces bleu cheese, I used Roquefort
- 4 tablespoons salted butter, softened
- 2 bunches kale, washed and patted dry and chopped (about 8 cups)
- 1 teaspoon lemon juice
- 1 to 2 teaspoons olive oil
- 1/2 a medium red onion, sliced vertically
- 8 ounces pancetta, diced
- 1 teaspoon Dijon mustard, I use country Dijon
- 3 tablespoons red wine vinegar
- salt and pepper to taste
- 6 hard boiled eggs, quartered
- 1 teaspoon sugar (for dressing)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine the softened butter and crumbled bleu cheese with a fork until well mixed. Slice the baguette on a slight angle into 12 slices, brush one side with olive oil, and bake in the preheated oven for 5 minutes. Remove and let cool slightly before spreading each slice with the bleu cheese butter. Set aside.
- Thoroughly wash and pat dry the kale leaves. Strip the leaves off the tough stems and give them a good chop (about 8 cups). Discard the stems.
- Place the chopped kale in a large salad bowl. Drizzle with 2 teaspoons of olive oil and 1 teaspoon of fresh lemon juice. Use your hands to massage the leaves until they are well coated and tender.
- Add the vertically sliced red onions to the bowl with the massaged kale and toss to combine.
- Move the oven rack to its highest position and turn on the broiler.
