My Enduring Love Affair with the Cheesesteak

For many, the cheesesteak holds a special place in their heart, and I am no exception. It’s a sandwich that transcends mere sustenance, embodying comfort, flavor, and a rich culinary tradition. On my personal food bucket list, an authentic pilgrimage to Philadelphia to indulge in a truly sloppy, gooey, and utterly magnificent cheesesteak undoubtedly holds the top spot. Ever since I can recall, it has reigned supreme as my favorite sandwich, perhaps rivaled only by the timeless peanut butter and jelly.

While I’ve enjoyed countless cheesesteaks over the years, I’ve always suspected that nothing compares to the legendary creations born in the heart of Philly. Each bite of a homemade version is an attempt to capture that magic, a delightful experiment in flavor. And today, we’re taking on that challenge with a phenomenal chicken iteration.

My palate wasn’t always as adventurous as it is now. As a child, I was famously a picky eater – a fact that often surprises those who know my current passion for food blogging! Back then, my order was strictly “steak and cheese,” devoid of any embellishments. No dressings, no toppings, absolutely nada. Thankfully, those days are long past. My culinary horizons expanded dramatically, surprisingly spurred by a pregnancy craving for mayonnaise on sandwiches – a simple addition that opened up a world of flavor combinations.

These Chicken Cheesesteak Sandwiches proudly feature some of my absolute favorite toppings: perfectly sautéed bell peppers, sweet caramelized onions, and a generous layer of tangy pickled jalapeños. And why chicken, you ask? Because a truly great sandwich offers endless possibilities! While beef cheesesteaks are a timeless classic, chicken provides a lighter, yet equally satisfying alternative, proving that one can never have too many delicious cheesesteak options.

Crafting the Perfect Chicken Cheesesteak: Ingredients & Preparation

The secret to an exceptional chicken cheesesteak lies in the quality of your ingredients and how they’re prepared. We’re going for maximum flavor and texture, ensuring every bite is a harmonious blend of savory, sweet, and tangy.

Selecting and Preparing Your Chicken

For this recipe, you’ll want approximately two pounds of boneless, skinless chicken thighs. While chicken breasts can certainly be used, I personally prefer the thighs for their superior juiciness and richer flavor, which holds up beautifully against the other robust ingredients. Begin by slicing the chicken into thin, even strips. This ensures quick and uniform cooking. Season generously with a pinch of kosher salt, freshly ground black pepper, and a quarter teaspoon of garlic powder (adjust to your taste). Toss the chicken thoroughly to evenly coat each strip with the seasonings, preparing it for its flavorful journey on the griddle.

The Art of Slicing Onions for Caramelization

Achieving that perfect caramelized onion texture and sweetness is crucial for a cheesesteak. When a recipe first called for “vertically sliced onions,” I admit I was perplexed. A quick search enlightened me, and now I’m here to share that wisdom! To master this technique, grab a sweet onion, slice off the top, cut it in half, and peel away the outer skin. Observe the faint lines running from the root to the tip of the onion; these are your guides. Slice along these natural lines to create beautiful, elongated strips. Finally, trim off the root end, and you’ll have perfectly prepared vertically sliced onions ready to transform into golden, sweet deliciousness.

Adding Color and Sweetness with Bell Peppers

I find that a mix of colors not only enhances the visual appeal but also adds a subtle depth of flavor. For this recipe, I opt for half a red and half an orange bell pepper. The red offers a slightly sweeter note, while the orange provides a beautiful vibrant hue. Of course, feel free to customize – use all red, all orange, or even go bold with a trio of red, orange, and green peppers for an even brighter burst of color and flavor.

After selecting your peppers, carefully remove the stems, all seeds, and the white membrane inside, as these parts can be bitter. Then, slice the peppers into thin strips, matching the size of your onion and chicken pieces for even cooking and a delightful texture in every bite.

The Zesty Kick: Pickled Jalapeños

To cut through the richness of the chicken and cheese, a touch of heat and acidity is essential. Pickled jalapeños provide just that! Surprisingly, I often have a jar of homemade pickled jalapeños from the summer stashed away, ready to elevate any dish. If you don’t have homemade, store-bought will work perfectly.

Simply scoop out a desired amount onto your cutting board and give them a good chop. The smaller pieces will distribute their delightful tang and mild spice more evenly throughout the sandwich.

Cooking Your Chicken Cheesesteak to Perfection

The cooking process for these sandwiches is straightforward but requires attention to detail to achieve that signature caramelized and tender goodness.

Sautéing the Vegetables

Begin by preheating your griddle to a consistent 375 degrees Fahrenheit, or a large skillet over medium-high heat. Drizzle about a tablespoon of light olive oil onto the hot surface. Once shimmering, add your sliced bell peppers and onions. Stir them to ensure they are coated in the oil, then let them sit undisturbed for a minute or two. This crucial step allows them to develop a beautiful caramelization and rich color on one side. Continue to cook, stirring occasionally, until the vegetables are tender-crisp – slightly soft but still retaining a pleasant firmness. The edges should be nicely browned, indicating that sweet caramelization is underway. Once done, transfer the cooked vegetables to a clean bowl and set aside.

Cooking the Chicken

Add another tablespoon of olive oil to the griddle or skillet. Then, spread your seasoned chicken strips onto the hot surface. To ensure an even cook and a beautiful crust, it’s best to work in batches if your griddle is not large enough to accommodate all the chicken without overcrowding. Allow the chicken to sit for a few minutes to form a lovely golden-brown crust before stirring. Continue cooking, flipping and stirring as needed, until the chicken is thoroughly cooked through, golden, and incredibly delicious. Once cooked, transfer the chicken to the bowl with your sautéed peppers and onions, and give everything a good toss to combine the flavors.

Assembling Your Masterpiece

With your chicken and vegetables perfectly cooked, it’s time to bring these incredible flavors together into a sandwich that’s truly greater than the sum of its parts.

Building the Sandwiches

Preheat your oven to 350 degrees Fahrenheit. Divide the aromatic chicken and pepper mixture evenly among six split sub buns. I often halve the buns beforehand for presentation, but it’s purely optional. Next, generously top each portion with your chopped pickled jalapeños. These will provide a delightful contrast with their bright, tangy heat. Finally, drape two slices of luscious smoked Provolone cheese over the top of each sandwich. The smoky notes of the Provolone perfectly complement the chicken and vegetables, creating a rich and complex flavor profile.

The Melted Cheese Finish

Carefully slide the assembled sandwiches into your preheated oven. Bake for approximately 5-8 minutes, or until the Provolone cheese is gloriously melted, bubbling, and just starting to turn golden at the edges. For an extra touch of moisture and flavor, I like to swipe a thin layer of mayonnaise on the inside of the top bun just before serving. This adds a subtle creaminess that ties all the elements together beautifully.

Once removed from the oven, these chicken cheesesteak sandwiches are a magnificent, savory mess that demands immediate attention. Take a moment to appreciate the melted cheese, the vibrant colors, and the enticing aroma before diving in.

These glorious chicken cheesesteak sandwiches are best enjoyed warm, allowing the melted cheese and juicy chicken to truly shine. They are perfect for a hearty lunch, a satisfying dinner, or even a crowd-pleasing game-day feast. Embrace the delicious chaos!

Enjoy every savory bite of this fantastic recipe! If you give these Chicken Cheesesteak Sandwiches a try, I would love to hear about it. Share your creations by snapping a photo and tagging me on Twitter or Instagram!

Prep Time: 10 minutes
Cook Time: 20 minutes
Additional Time: 5 minutes
Total Time: 35 minutes

Ingredients

  • 2 tablespoon light olive oil
  • 1/2 orange bell pepper, cored, seeded, and sliced thin
  • 1/2 red bell pepper, cored, seeded, and sliced thin
  • 1 sweet onion, peeled and sliced vertically
  • 2 pounds boneless, skinless chicken thighs, trimmed of excess fat and sliced thin
  • 2 pinches kosher salt
  • 1 pinch freshly ground black pepper
  • 1/4 teaspoon garlic powder, more or less to taste
  • pickled jalapenos, chopped, for topping
  • 12 slices smoked provolone cheese
  • 6 six-inch sub buns
  • mayonnaise, for spreading (optional)

Instructions

  • Preheat your griddle to 375°F (190°C) or a large twelve-inch skillet over medium/medium-high heat. Also, preheat your oven to 350°F (175°C).
  • Once the griddle or skillet is hot, add one tablespoon of olive oil. Add the sliced bell peppers and onions. Stir to coat them in oil, then let them cook undisturbed for 1-2 minutes to encourage caramelization and color. Continue to cook, stirring occasionally, until the onions and peppers are soft yet still slightly firm and beautifully caramelized. Transfer them to a clean bowl.
  • Add the remaining olive oil (about one tablespoon) to the griddle or pan. Add the seasoned chicken strips. Work in batches if necessary to avoid overcrowding, allowing the chicken to brown and cook evenly. Cook until the chicken is golden and fully cooked through. Once done, transfer the cooked chicken to the bowl with the peppers and onions and toss gently to combine.
  • Divide the chicken and pepper mixture evenly among the six split sub buns. Top each portion with chopped pickled jalapeños (if desired, adjusting quantity to your spice preference) and two slices of smoked Provolone cheese per sandwich.
  • Carefully slide the assembled sandwiches into your preheated oven. Bake for 5-8 minutes, or until the cheese is gloriously melted and bubbly.
  • For added moisture and flavor, spread a thin layer of mayonnaise (if desired) on the inside of the top bun just before serving. Serve your delicious chicken cheesesteak sandwiches warm and enjoy!
