  • Preheat your oven to 350°F (175°C). Generously butter a 9″ springform pan. Add about two tablespoons of polenta into the pan and turn the pan to coat in a thin layer of polenta. Shake out and discard the excess polenta.
  • In a small saucepan, add 2 tablespoons of honey and 1/2 tablespoon of butter. Gently warm over low heat until the butter has melted and the honey has thinned (do not bring to a boil). Pour this mixture over the washed blackberries in a bowl and stir to coat. Set aside.
  • In a medium-sized bowl, combine the flour, polenta, salt, baking soda, and baking powder. Whisk thoroughly to combine.
  • In the bowl of your stand mixer, add the remaining 1 cup of softened unsalted butter (2 sticks), 1 cup cane sugar, and the lemon zest. Blend on medium speed until the mixture is light, fluffy, and pale. Remember to scrape down the sides of the bowl periodically.
  • Add the whisked dry ingredients to the butter mixture. Mix on low speed just until incorporated and the mixture becomes crumbly. Do not overmix.
