Slow Cooker Chicken and Vegetables, affectionately known as “chicken in a pot,” is a ridiculously simple and comforting slow cooker meal. A whole chicken cooks to incredible tenderness with carrots, onions, and celery. Serve with creamy mashed potatoes for an ultimate comfort food experience.

Ingredients

  • 2 carrots, trimmed and sliced
  • 2 short stalks celery, trimmed and sliced
  • 2 medium onions, peeled and sliced
  • 4 pound whole chicken
  • 1 cup chicken broth (low-sodium recommended)
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon dried basil
  • 4 cups mashed potatoes, see notes

Instructions

  1. Add the sliced carrots, celery, and onions to your slow cooker.
  2. Place the whole chicken on top and pour in the broth.
  3. Season everything generously with salt, pepper, and basil.
  4. Cover and cook on low for 7 to 10 hours or on high for 3½ to 5 hours, until the chicken is fall-off-the-bone tender.
  5. At this point, you have two options:

    a) (Traditional Serving) You can carefully remove the chicken, place it under a preheated broiler for a few minutes to crisp the skin (optional), carve, and serve with the pan juices (or a quick gravy made from them).

    b) (Creamy Shredded Version) Remove the chicken to a cutting board. Pour the cooking liquids and vegetables through a strainer into a large bowl or measuring cup. Return the strained vegetables to the slow cooker. Pour the liquids into a fat separator and, once the fat has separated, add the de-fatted juices back to the slow cooker, leaving the fat behind. Carefully remove and discard the chicken skin. Pick the meat from the bones and shred it into bite-sized pieces, then add it back into the slow cooker with the vegetables and strained liquids. (You can save the bones to make chicken stock or discard them.)
  6. If opting for option b), add 1 cup of mashed potatoes to the slow cooker and stir it into the chicken and vegetables until well combined. This will add a wonderful creaminess to the sauce.
  7. Spoon some mashed potatoes into bowls and serve a generous helping of the saucy chicken and vegetables over top.
  8. Season with additional black pepper, fresh snipped chives, or parsley, and serve with soft rolls for dipping.
