The Enduring Charm of a Childhood Favorite: Unpacking Turkey Slop
For many, the mention of “Turkey Slop” conjures vivid memories of bustling school cafeterias and eagerly anticipated lunch breaks. While the name might not sound glamorous, the taste was undeniably legendary. If you, like me and my husband, spent your junior or high school years enjoying the culinary delights of a certain lunchroom, then you understand the deep affection this dish holds. It wasn’t just another item on the menu; it was a highlight, standing proudly alongside other beloved classics like beef sticks, tostadas, and French toast sticks.
My husband, Pat, was particularly enamored with this savory concoction. On “Turkey Slop Day,” it wasn’t uncommon for him to indulge in what we affectionately called “triple lunch” – a colossal three servings of this delightful dish, which would practically monopolize his entire styrofoam tray. The sheer volume was comically epic, a testament to how truly irresistible this humble meal was.
What Exactly is Turkey Slop? A Comfort Food Defined
At its heart, Turkey Slop is a masterpiece of simplicity and flavor: perfectly shredded turkey bathed in a rich, aromatic gravy, served atop a generous bed of silky, smooth mashed potatoes. It’s a dish that exemplifies hearty, stick-to-your-ribs comfort food, designed to warm you from the inside out. For years since our school days, it became my personal mission to recreate this iconic dish at home, to capture that specific taste and comforting essence that Pat remembered so fondly.
My early attempts often involved shortcuts, like using cream of chicken soup for the gravy base. While passable, it never quite hit the mark. Over time, through culinary exploration and practice, I discovered the secret to a truly spectacular, lusciously creamy pan gravy: the classic roux. By carefully cooking flour and butter, then gradually whisking in rich turkey stock and wholesome milk, I finally achieved a gravy that was not only incredibly flavorful but also had the perfect texture – a gravy worthy of our beloved Turkey Slop.

While Turkey Slop may not win awards for its aesthetic appeal – it’s a rustic dish by nature – its profound deliciousness and soul-satisfsatisfying qualities are undeniable. It’s an inventive and incredibly flavorful method to utilize every last bit of that precious leftover turkey, ensuring no delicious morsel goes to waste.
Essential Ingredients for Your Homemade Turkey Slop Adventure
Crafting the perfect Turkey Slop requires a handful of accessible ingredients that come together to create a symphony of savory flavors. Here’s a detailed look at what you’ll need and why each component is crucial:

- Leftover Cooked Turkey: The star of our show! Ideally, you’ll want a mix of both light and dark meat for a more complex flavor and tender texture. Shredded into bite-sized pieces, it forms the hearty core of the dish.
- Yellow Onion: Finely minced, yellow onion provides a delicate, sweet, and aromatic base for the gravy, adding depth without overpowering the turkey.
- Garlic: A large clove of fresh garlic, finely chopped or smashed, infuses the gravy with its distinct, pungent, and savory essence, elevating the overall flavor profile.
- Kosher Salt: More than just seasoning, salt is essential for drawing out and enhancing the natural flavors of all the ingredients, bringing the dish to life.
- Unsalted Butter: The foundation of our rich roux, unsalted butter not only provides a luxurious flavor but also acts as the fat component to perfectly thicken the gravy.
- Poultry Seasoning: A blend of herbs and spices specifically formulated to complement turkey, poultry seasoning adds an authentic, savory, and aromatic complexity. I personally favor a good quality brand like Morton & Bassett for its robust flavor.
- Unbleached All-Purpose Flour: This is the crucial ingredient for creating the roux, which will thicken our gravy to that ideal, luscious consistency.
- Turkey Stock (or Broth): Whether homemade or store-bought, good quality turkey stock is vital for building the deep, savory flavor of the gravy. It’s the liquid backbone of the sauce.
- Whole Milk: Adding whole milk introduces a delightful creaminess and richness to the gravy, contributing to its velvety texture and comforting mouthfeel.
- Freshly Ground Black Pepper: A final touch of freshly ground black pepper provides a subtle warmth and a gentle bite, perfectly balancing the richness of the dish.
Maximizing Your Leftovers: Preparing the Turkey

While Turkey Slop is famously a fantastic way to utilize Thanksgiving leftovers, don’t let a lack of holiday bird deter you! This comforting meal can absolutely be enjoyed year-round. If you don’t have leftover roasted turkey, simply prepare some turkey breasts or tenderloins. You can poach them gently, roast them in the oven, or even pan-fry them until cooked through. Once cooled slightly, they’re ready to be shredded into perfect, bite-sized pieces. However, for that authentic, rich flavor, nothing quite beats the succulent remnants of a holiday feast.
The Effortless Way to Shred Turkey or Chicken: A Pro Tip
Shredding cooked turkey can sometimes be a tedious task, but there’s a brilliant shortcut to make it incredibly easy and fast. Simply place the desired amount of cooked turkey (cooled slightly) into a large mixing bowl. Using your electric hand mixer on a low speed, gently “shred” the turkey. In mere minutes – often seconds – you’ll have perfectly shredded turkey, ready for your recipe. This technique saves time and effort, ensuring uniform pieces for your slop.

For this recipe, you will need approximately 4 cups of shredded cooked turkey. This amount ensures a generous turkey-to-gravy ratio, making every spoonful satisfying.
Crafting the Savory Gravy: Step-by-Step Perfection
The heart of Turkey Slop lies in its incredibly flavorful and rich gravy. Follow these steps for a truly unforgettable sauce:

Begin by preparing your aromatics. In the bowl of your mini food processor, add half a yellow onion, roughly chopped, and one large clove of garlic, peeled and smashed.

Pulse these ingredients until they are finely chopped. The goal is to have very small pieces that will “melt” into the sauce, contributing their flavor without leaving noticeable chunks.

In a 10-inch skillet, melt 4 tablespoons of unsalted butter over medium-low heat. Add the finely chopped onion and garlic mixture along with a pinch of kosher salt. Stir continuously and cook gently until the vegetables have softened and become translucent, which typically takes about 6 minutes. This slow cooking allows their sweet flavors to develop.

Once your aromatics are beautifully softened, sprinkle in 1-1/2 teaspoons of good quality poultry seasoning. This spice blend will infuse the gravy with classic turkey flavors.

Stir the poultry seasoning into the butter and vegetable mixture and continue to cook for about 1 minute. This step helps to “bloom” the herbs and spices, releasing their full aromatic potential and enhancing the flavor of your gravy base.

Now it’s time to build your roux. Sprinkle in 2 tablespoons of unbleached all-purpose flour over the mixture. Stir continuously for 2 minutes, ensuring the flour is fully incorporated and cooked. This cooking time is essential to remove the raw flour taste and create a smooth, lump-free gravy.

Switch to a whisk. While continuously whisking to prevent lumps, slowly pour in 2 cups of turkey stock or broth. The whisking action is key to achieving a smooth consistency.

Next, pour in 1 cup of whole milk, continuing to whisk. Increase the heat to medium to medium-high and bring the mixture to a gentle bubble. Once it begins to bubble, reduce the heat to a simmer and continue to cook, stirring occasionally, until the gravy has slightly thickened to your desired consistency. This usually takes about 8 minutes. The gravy will thicken further as it cools.

Finally, gently fold in the 4 cups of shredded leftover turkey into the simmering gravy. Stir until the turkey is fully coated and heated through. If the gravy appears too thick at this stage, feel free to stir in a little extra turkey stock or milk, a tablespoon at a time, until it reaches your preferred consistency.

Always remember to taste and adjust! Season with additional kosher salt and freshly ground black pepper as needed. The perfect seasoning will bring all the flavors into harmony.

And just like that, your incredibly easy and supremely delicious homemade Turkey Slop is ready!

What to Serve with Your Turkey Slop (Also Known as Turkey and Gravy)
While mashed potatoes are non-negotiable for a true Turkey Slop experience, several side dishes can beautifully round out this comforting meal. Here are some excellent pairing ideas:
- Creamy Classic Mashed Potatoes: The essential base, providing a soft, buttery counterpoint to the savory turkey and gravy.
- Crispy Air Fryer Brussels Sprouts: Their slightly bitter, nutty flavor and crisp texture offer a wonderful contrast to the richness of the main dish.
- Buttered Sweet Corn: A touch of natural sweetness and vibrant color, sweet corn is a simple yet satisfying accompaniment.
- Garlic Butter Roasted Carrots: Roasted carrots, tender and caramelized, with a hint of garlic and butter, add sweetness and an earthy depth.
- Fresh Green Bean Casserole with Onion Ring Topping: A classic comfort side, offering a creamy texture and crispy onion crunch.
- Homemade Dinner Rolls: Perfect for soaking up every last drop of that delicious gravy.
Pro Tips for the Best Turkey Slop Experience
- Consistency is Key: If your gravy becomes too thick while simmering, gradually whisk in a little more turkey stock or milk until it reaches your desired consistency. If it’s too thin, you can make a quick slurry with a teaspoon of flour and a tablespoon of cold water, then whisk it into the simmering gravy until thickened.
- Seasoning to Taste: Always taste your gravy before adding the turkey and again before serving. Adjust salt and pepper as needed. A dash of onion powder or a pinch of dried thyme can further enhance the flavor.
- Make it Gluten-Free: For a gluten-free version, simply substitute the all-purpose flour with a gluten-free all-purpose flour blend or cornstarch (use half the amount of cornstarch mixed with cold water to make a slurry before adding).
- Dairy-Free Option: If you prefer, unsweetened almond milk or oat milk can be used in place of whole milk, though the richness might vary slightly.
- Advanced Flavor Boost: If you have turkey drippings from roasting, incorporate a tablespoon or two into your butter and onion mixture for an even deeper, more authentic turkey flavor in your gravy.
- Storage and Reheating: Turkey Slop stores beautifully. Allow it to cool completely before transferring to an airtight container. It can be refrigerated for up to 3-4 days. To reheat, gently warm on the stovetop over low heat, adding a splash of turkey stock or milk if the gravy has thickened too much.
