Ingredients
FOR THE CORN MAYO:

FOR THE BURGERS:
- 2 pounds ground beef, 80/20

- 1/2 cup finely diced yellow onion

FOR THE BURGERS:
- In a large bowl, gently break up the two pounds of ground chuck. Add the onions, finely diced jalapeño, minced cilantro, Worcestershire sauce, garlic powder, kosher salt, and freshly ground black pepper. Use a fork to gently combine the ingredients, being careful not to overmix the meat.
- Divide the meat into six equal portions and form into patties. Make a shallow divot in the center of each patty to prevent it from doming up during grilling.
- Preheat your grill to high heat. Once hot, reduce the temperature to medium/medium-high. Place the burger patties onto the grill grates and close the lid. Grill for 5-6 minutes on the first side.
- Flip the burgers, immediately place a slice of sharp cheddar cheese on top of each, and close the lid. Continue to grill for another 4-6 minutes, or until the cheese is melted and the burgers reach your desired level of doneness.
- Assemble your burgers: Top the toasted buns with a lettuce leaf, a generous spoonful of charred corn mayo, a cooked burger patty, sliced tomato, and sliced red onion. Serve immediately and enjoy!
