  • 1/2 cup orange juice
  • 1 teaspoon vanilla bean paste, or pure vanilla extract
  • 2 tablespoons unsalted butter, cut into 8 pieces

FOR SERVING (Optional):

  • 4 scoops vanilla ice cream, see recipe notes
  • 1 cup honey almond granola, see recipe notes
  • 1 tablespoon chopped fresh rosemary, see recipe notes

Instructions 

  • Preheat your oven to 350°F (OR 180°C).

    Cut the nectarines in half like you would an avocado, starting at the stem and circling around. Gently twist and remove the pit, along with any remaining stem pieces, and discard. Set the nectarine halves aside, cut-side up.

  • In a small bowl, measure and combine the brown sugar, ground cardamom, ground cinnamon, and ground nutmeg. Mix well until all ingredients are thoroughly combined and fragrant. Set this spiced sugar mixture aside.
  • To 1/2 cup of orange juice, add 1 teaspoon of vanilla bean paste (or pure vanilla extract). Stir vigorously to ensure the vanilla is fully incorporated into the juice.
  • In a baking dish or nonstick pan, pour in the vanilla-orange juice mixture. Carefully place the nectarine halves cut-side up in the pan. Evenly sprinkle about 1 teaspoon of the spiced brown sugar over the top and into the center of each nectarine half. Dot each half with a small piece of unsalted butter. Slide the pan onto the middle rack of your preheated oven and bake for 30 minutes, rotating the pan halfway through baking to ensure even cooking and caramelization.
